Sorry to be so Tardy, but I've been at the Hospital with a Friend for most of this Weekend and was not aware that anything was going on. Here's a wonderful Baked Chicken recipe that's quick and easy. Using just a few handy ingredients, create a delicious main dish that also makes great leftovers, if there are any. Serve with a salad and pasta or rice for a quick, scrumptious dinner, or you might even try the Potatoes below. Baked Garlic Parmesan Chicken Ingredients - 2 tablespoons olive oil
- 1 clove garlic, minced
- 1 cup dry bread crumbs
- 2/3 cup grated Parmesan cheese
- 1 teaspoon dried basil leaves
- 1/4 teaspoon ground black pepper
- 6 skinless, boneless chicken breast halves
Directions - Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
- In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
- Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.
Here's an unbelievable rich twist on au gratin potatoes, this casserole develops a caramelized, cheesy, roasted-garlic crust as it bakes. However, this dish does not save well (leftovers tend to separate and become oily), so eat up. Garlic Potatoes Gratin Ingredients - 3 pounds red potatoes, peeled and sliced
- 6 ounces Gouda cheese, shredded, divided
- 3 tablespoons butter
- 5 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Directions - Preheat oven to 325 degrees F. Lightly grease a 9x13 inch baking dish.
- In the prepared dish layer 1/2 of the potatoes, 1/2 of the cheese, then the remaining potatoes.
- Melt the butter in a small skillet over medium heat. Saute garlic until fragrant and golden brown; pour over potatoes.
- Combine cream, salt and pepper; pour evenly over potatoes and sprinkle with remaining cheese.
- Bake in preheated oven for 75 minutes. Serve immediately.
