Hello My Friends,

Today we have a flavorful homemade recipe for those who are tired of sweet pasta sauces. Serve over your favorite pasta with a tossed green salad shown below and some warm homemade bread.

Pasta Sauce with Italian Sausage

Ingredients

  • 1 pound Italian sausage links
  • 1/2 pound lean ground beef
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 clove garlic, chopped
  • 1 (16 ounce) can canned tomatoes
  • 1 (15 ounce) can canned tomato sauce
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 bay leaf

Directions

  1. Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
  2. In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
  3. Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
  4. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  5. Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

This is a delicious salad that goes great with any meal, especially Italian!

Classic Tossed Salad

Ingredients

  • 1 cup blanched slivered almonds
  • 2 tablespoons sesame seeds
  • 1 head romaine lettuce, torn into bite-size pieces
  • 1 head red leaf lettuce, torn into bite-size pieces
  • 1 (8 ounce) package crumbled feta cheese
  • 1 (4 ounce) can sliced black olives
  • 1 cup cherry tomatoes, halved
  • 1 red onion, halved and thinly sliced
  • 6 fresh mushrooms, sliced
  • 1/4 cup grated Romano cheese
  • 1 (8 ounce) bottle Italian salad dressing

Directions

  1. Heat a large skillet over medium-high heat. Place the almonds in the skillet, and cook, stirring frequently until lightly browned. When the almonds are beginning to turn, add sesame seeds, and cook 1 more minute, or until seeds are toasted.
  2. In a large salad bowl, combine lettuce with feta cheese, olives, almonds, sesame seeds, tomatoes, onion, mushrooms, and Romano cheese. When ready to serve, toss with Italian dressing.

Finish off your Perfect meal with some Homemade Bread. This makes an impressive, large loaf of bread with an excellent texture inside and the Mozzarella makes the loaf smell wonderful coming out of the oven.

Mozzarella Basil Bread

Ingredients

  • 2 cups warm water (100 degrees F/40 degrees C)
  • 1 tablespoon white sugar
  • 1 tablespoon active dry yeast
  • 1 tablespoon salt
  • 4 cups bread flour, or as needed
  • 1 cup shredded mozzarella cheese
  • 1/4 cup milk
  • 1 tablespoon dried basil

Directions

  1. Mix warm water with sugar in a large mixing bowl until the sugar has dissolved. Sprinkle yeast over the surface of the water, and let stand until the yeast begins to form a creamy layer on the water. Stir the yeast into the water. Stir in salt, and 1 cup of bread flour, and beat the flour in to form a loose batter. Stir in 1 more cup of flour, and mix in the mozzarella cheese, milk, and basil. Mix in the remaining 2 cups of flour in 1/2-cup additions.
  2. Turn the dough out onto a well-floured work surface, and knead until the dough is thoroughly mixed, but still sticky, 5 to 8 minutes. Add flour into the dough as you knead, if necessary. Form the dough into a ball, and place into an oiled bowl. Turn the dough over in the bowl to oil the surface of the dough, and cover with a cloth. Allow to rise until double, about 1 hour.
  3. With your fist, press firmly on the dough to deflate the large bubbles. Turn the dough out onto a well-floured work surface, and knead the dough just long enough to eliminate the remaining bubbles in the dough, about 1 minute. Cut the dough into 2 equal pieces, and form each half into a round ball. Spray a baking sheet with nonstick cooking spray, and place the balls onto the baking sheet. With a sharp knife, slash an X into the top of each loaf. Cover the loaves with a towel, and let rise until doubled, about 25 minutes.
  4. Preheat oven to 425 degrees F (220 degrees C).
  5. Bake the loaves until browned, about 25 minutes. To serve, cut each loaf into 8 wedges.

Yield 2 Round loaves

Hope Your Week's Terrific

Phil
