Hello My Friends, Folks, I'll admit it! I'm tired of Winter! Ready for some Grilling out on the Back Yard! So, once again this evening, we'll start off with some Healthier Turkey Burgers. However, we spice these up just a bit with a little chipotle chile pepper, mozzarella cheese, and other seasonings, so that I'll guarantee that your family will absolutely love this spicy, yet flavorful, burger Spicy Chipotle Turkey Burgers Ingredients - 1 pound ground turkey
- 1/2 cup finely chopped onion
- 2 tablespoons chopped fresh cilantro
- 1 chipotle chile in adobo sauce, finely chopped
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon seasoned salt
- 1/4 teaspoon black pepper
- 4 slices mozzarella cheese
- 4 hamburger buns, split and toasted
Directions - Preheat an outdoor grill for medium-high heat, and lightly oil grate. Place the ground turkey, onion, cilantro, chipotle chile pepper, garlic powder, onion powder, seasoned salt, and black pepper in a mixing bowl; mix well. Form into 4 patties.
- Cook the hamburgers on the preheated grill until the turkey is no longer pink in the center, about 4 minutes per side. Place the mozzarella slices on the patties 2 minutes before they are ready. Serve on the toasted homemade buns.
Compliment those Burgers, with a wonderful old-fashioned baked beans recipe that has been around my family for over 30 years, and originally came from one of my my mother-in-laws. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy. Boston Baked Beans Ingredients - 2 cups navy beans
- 1/2 pound bacon
- 1 onion, finely diced
- 3 tablespoons molasses
- 2 teaspoons salt
- 1/4 teaspoon ground black pepper
- 1/4 teaspoon dry mustard
- 1/2 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1/4 cup brown sugar
Directions - Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
- Preheat oven to 325 degrees F.
- Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
- In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
- Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.
To complete your meal, I would suggest these homemade Hamburger Buns. The dough setting on my bread machine makes it easy to prepare fresh rolls in a variety of shapes. We especially like these hamburger buns that are golden, tender and flavorful. Ranch Hamburger Buns Ingredients. - 1/2 cup water (70 to 80 degrees F)
- 1/2 cup plain yogurt
- 1 egg
- 3/4 cup shredded Cheddar cheese
- 2 tablespoons nonfat dry milk powder
- 4 1/2 teaspoons sugar
- 1 tablespoon ranch salad dressing mix
- 1 1/2 teaspoons salt
- 3 cups bread flour
- 2 1/4 teaspoons active dry yeast
EGG WASH: - 1 egg
- 2 tablespoons water
- Poppyseeds or sesame seeds (optional)
Directions - In bread machine pan, place the first 10 ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed).
- When the cycle is completed, turn dough onto a lightly greased surface. Cut into 12 pieces; shape each into a round ball. Place in greased jumbo muffin cups or 4-1/2-in. disposable aluminum foil pans. (If using foil pans, place on two baking sheets.)
- Cover and let rise in a warm place until doubled, about 45 minutes. Meanwhile, whisk together egg and water. Brush over buns; sprinkle with poppy or sesame seeds if desired. Bake at 400 degrees F for 8-12 minutes or until lightly browned. Remove from pans to wire racks to cool.
