Hi Donna, It's great to see you here at the Forum once again. I'm so glad that you liked the recipes. Here's one with a little shorter cooking time, but just as tender and delicious. The aroma that fills the house as this pork dish simmers if fabulous. All you need to complete the meal is a green vegetable and maybe a loaf of bread. Chops With Fruit Stuffing Ingredients - 6 boneless pork loin chops (1/2 inch thick and 4 ounces each)
- 1 tablespoon canola oil
- 1 package (6 ounces) herb stuffing mix
- 2 celery ribs, chopped
- 1 medium tart apple, peeled and chopped
- 1 cup dried cherries or cranberries
- 1/2 cup chopped onion
- 2/3 cup chicken broth
- 1/4 cup butter, melted
Directions - In a large skillet, brown pork chops in oil on both sides. In a large bowl, combine the remaining ingredients.
- Place half of the stuffing mixture in a 3-qt. slow cooker. Top with pork and remaining stuffing mixture. Cover and cook on low for 3 hours or until a meat thermometer reads 160°. Serves 6.
The Shallots, basil and broth all rev up the taste of this nutritious vegetable medley and the bright colors and fresh flavors will really dress up your plate. Broccoli Cauliflower Combo Ingredients - 4 cups fresh broccoli florets
- 2 cups fresh cauliflowerets
- 3 shallots, chopped
- 1/2 cup reduced-sodium chicken broth or vegetable broth
- 1 teaspoon dried basil
- 1/2 teaspoon seasoned salt
- 1/8 teaspoon pepper
Directions - In a large skillet, combine all ingredients. Cover and cook over medium heat for 6-8 minutes or until vegetables are crisp-tender, stirring occasionally. Serves 6.
