Hello My Friends,

Hopefully the last of the Leftovers are but a distant memory, and now we're ready for another tasty meal or two. Here's one that I hoped you might enjoy.

Slow-Cooker Apple-Glazed Pork Roast

What You Need

• 4-pound pork loin roast
• 6 apples
• 1/4 cup apple juice
• 3 tablepsoons brown sugar
• 1 teaspoon ground ginger

What To Do

1. Rub roast with salt and pepper.

2. Brown pork roast under broiler to remove excess fat; drain well.

3. Core and quarter apples. Place apple quarters in bottom of crockpot. Place roast on top of apples.

4. Combine apple juice, brown sugar, and ginger. Spoon over top surface of roast, moistening well.

5. Cover and cook on low for 10-12 hours, until done.

Have A Terrific Evening My Friends,

Phil

Hi Phil,
I know this thread isn't really the place for this video but food is food and the deli in the video has mouth watering sandwiches, platters and food in general. I love delis and whenever I'm in New York I visit them whenever possible. The deli in the video is as good as any of the best NY delis.
Enjoy the virtual feast.
Shalom,
Peter

Hello Everyone,

For my Friends out in the Mid-West of the Great Country as well as our Friends over in Europe...

Oh, The Weather Outside Is Frightful

On a Cold & Snowy Day, here's a Hearty Bean and Vegetable Stew. These Beans and vegetables are slow-cooked to true stewish perfection.

Slow-Cooker Bean and Vegetable Stew

1 lb assorted dry beans *
2 cups vegetable juice
1/2 cup dry white wine (optional)
1/3 cup soy sauce
1/3 cup apple or pineapple juice
1/2 cup celery, diced
1/2 cup parsnips, diced
1/2 cup carrots, diced
1/2 cup mushrooms, diced
1 onion, diced
1 tsp basil, dried
1 tsp parsley, dried
1 bay leaf
3 clove garlic, minced
1 tsp black pepper, ground
1 cup rice or pasta, cooked
Vegetable stock or water

Rinse beans and then soak overnight in water.

Drain beans and place in crockpot. Add vegetable juice, wine, soy sauce, and apple or pineapple juice. Cover with vegetable stock or water; the amount added depends on whether you prefer a soup (more liquid) or a stew (less). The juice adds just a tad of sweetness and the soy sauce adds depth and the tang of salt.

Cook on high for 2 hours. Add vegetables, herbs, and spices, and cook for 5-6 hours on low until carrots and parsnips are tender. When tender, add rice or pasta and cook for one additional hour on low.

* For beans use 3 or 4 kinds, such as black, red kidney, pinto, baby lima, lentil, and green and/or yellow split peas. The more the merrier.

Have A Blessed Holiday My Friends,

Phil
