Hi Nick, you are so welcome.

Kathleen, I just had the best laugh I have had for a long time.  When you said"
it was still thick enough to mortar the pyramids"  it really struck me funny.
You have such a wonderful sense of humor, thanks for sharing.

Maybe we are close to reveal the secret about Pyramids?

Dearest Nick, I enjoyed this slaw walk over this topic so very much.Seems this cookie works before has been baked.

The Cookie Journal

Friday night:
I went to the grocery store and found everything
EXCEPT ground flaxseed, found NO flaxseed, that's
unusual because I thought I saw it before but not
this time!  I went home and ate half the package of
dried cranberries.

Saturday morning:
Went to the gourmet store, got my free coffee and
free international cheese cube, don't remember what
it was but I ate it and it was okay, but still didn't
find flaxseed in any format. Then asked an old man
to back my car out after he blocked me in, following
my own advice of asking the oldest available person
to help me, well, HE was the one who blocked me in and
if he didn't help me I would have bonked his car, not
just dinged, BONKED!  He helped, YAY! He was probably
glad to still be driving at age zillion and have someone
hand over her keys, but he did move my car a few more
feet than he should have, hmmmm. Why didn't I just ask
him to move HIS car?  I didn't think of that until just NOW.

Saturday between 12 noon and 1 pm (didn't take a full hour):
I made the cookie dough, made a mistake in adding the
brown sugar to the dry ingredients
instead of beating it with the olive oil, etc.  SO to make
up for that mistake, I beat in half the dry ingredients
with the mixer into the olive oil, I know 2 wrongs don't
make a right, but it made sense at the time.  Then mixed
it all together, it got very thick, so I added an extra egg and a little more oil, maybe an extra 1/4 cup, but it was still very thick, then added the rolled
oats and cranberries, impossible to stir with a spoon then
so I tried the electric mixer again, BIG MISTAKE. 
It wouldn't even spin off when I lifted the beaters out of
the dough, that usually works but not with this thick mortar.
So then I put plastic bags on my hands and squashed it all
by hand.  Then put it on plastic wrap and it made a very long
tube of probably over 2 feet by 3-inch diameter and put it
in the fridge.

Saturday around 8 pm:
I cut half the dough into 1/2-inch segments, it squished as I
cut it so the cookies weren't round, made 24 cookies, baked for
20 minutes.  After cooling to non-mouth-burning temp, we ate
some, not chocolately enough, so I put the rest into ziploc bags,
but I did eat several.

Sunday morning:
I ate several of the cookies for breakfast instead of the usual 2 bowls of sugary cereal.  I'm always glad to have anything chocolate for breakfast. They tasted better than the day before, more chocolate flavor and they stayed very moist in the ziploc bags.

Sunday around 12 noon:
I made the other half of the cookies, the second half made 26 cookies, so I got a total of 50 from the entire batch of dough. This time they tasted good
immediately after baking, maybe the 23 hours in the fridge made
the dough more well-blended.  I ate several more all day.  My son
also ate more on his own with full knowledge they were healthy for him.

PRIOR WARNING to anyone who's going to make these:
The consistency of the dough and baked cookies is comparable to...
let's just say, a thick brown pile. If you have immature people in
your house, or yourself, try to refrain from the commentary!

GOOD NEWS: The finished cookies do not taste like olive oil, they
don't even taste like health food, and you can eat them all day!!!
