Pat,

Thank you for sharing this unusual recipe. They sound better than traditional fruitcake, lol. I imagine a nice homemade fruitcake is delicious, but all I have ever tasted are store bought ones that are kind of dry.

I don't have a tube/bundt pan, Phil but could try this in a regular cake pan.

Hi Donna,

Yes my Friend, this works just as well in a Regular Pound Cake Pan, and I've made it both ways. Everybody seemed to like it either way.

I devised this recipe when I was trying to use up that leftover homemade cranberry sauce from Christmas, however, you could probably also use canned whole cranberry sauce for this recipe.

Apple Crisp With Cranberry Sauce

Ingredients

  • 4 Granny Smith apples - peeled, cored and sliced
  • 1 1/2 cups whole berry cranberry sauce
  • 1 cup whole wheat pastry flour
  • 1 cup rolled oats
  • 2/3 cup packed brown sugar
  • 2/3 teaspoon ground cinnamon
  • 1/2 cup butter, melted

Directions

  1. Preheat the oven to 350 degrees F (175 degrees C).
  2. Place apple slices in an 8 or 9 inch square baking dish. Spread the cranberry sauce over the apples. In a medium bowl, stir together the flour, oats, brown sugar, cinnamon, and butter until crumbly. Sprinkle over the apples and cranberry sauce, covering completely.
  3. Bake for 45 minutes in the preheated oven, or until apples can be easily pierced with a knife and topping is browned.
