Quick Apple Cake

1 cup flour

1 teaspoon baking powder

pinch of salt

3 Tablespoons butter

1/2 cup milk

Mix dry ingredients then add milk. Press into a greased and floured 8 " pie pan. Slice 3 apples on top of dough and sprinkle with the following mixture:

3/4 cup brown sugar

2 Tablespoons butter

2 Tablespoons flour

1/4 teaspoon cinnamon

Bake at 350 for 20-25 minutes. Serve warm with cream, ice cream, or whipped cream.

This recipe was posted in a community cookbook in the 1960's.

Applesauce Cake

1 cup sugar

1/2 cup shortening

1 3/4 cups flour

1 cup warm applesauce

1 teaspoon soda 1/2 teaspoon orange extract 1 teaspoon cinnamon

1/2 teaspoon nutmeg

1 cup raisins, dredged in flour

Cream sugar and shortening; add flour and warm applesauce, orange extract, and raisins. Bake in 8" pie pan or loaf cake tin in 350-375 oven for 45 minutes.

This recipe is from the same community cookbook as the prior recipe.

One more recipe from the old community cookbook from the 1960's. These are from the community in which I was raised in northern Wisconsin.

Apple Crumb Pie

Prepare apple slices and arrange in a 9" pastry lined pan. Mix 1/2 cup sugar with 1 teaspoon cinnamon and sprinkle over apples. Then sift 1/2 cup sugar with 3/4 cups flour, cut in 1/3 cup butter until crumbly. Sprinkle over apples. Bake in 400 degree oven for about 40 minutes.

Hi Pat,

I have never made fruit cake. It wasn't popular in northern Wisconsin where I grew up, nor do I recall my mother-in-law making it in southern Wisconsin. I have had purchased fruit cake if you are talking about the kind popular for Christmas, but never homemade.

I do have a fruit cocktail cake recipe I will post next.
