Hello Friends,

Sorry about the hunger pangs Barry, I also had to change my choice of menus this weekend after sharing some of the great suggestions from you all about the Shrimp. Fortunately, for my Diet at least, these are all healthy choices, so not too much damage will be done by eating some good Shrimp and grilled vegetables. At least not like over Memorial Day weekend, when I partook of the Hamburger and Brats menu, with the resulting unfortunate consequences.

Myrna, I am also fond of stir-frying my vegetables, but I have been using primarily Peanut Oil, because of its' high smoke point. Thanks for reminding me about Grapeseed Oil. Much healthier than Peanut Oil, and a whole lot better than Corn Oil. I've used Grapeseed Oil numerous times as a base for my Salad Dressings because of its' light, almost neutral taste.

Now, I've got some Shrimp and Steaks to grill, along with some Corn and Fresh Veggies. I'll be back on Monday with more healthy and hearty recipes. Wishing you both a happy and restful Weekend with plenty of great food and the company of many good friends.

Hello Friends,

As promised, it's Monday and I'm Back! This time it's back to everybody's, well most everybody's, favorite, Salmon.

This is an extremely simple, but very enjoyable main course. I generally stick it in the oven during the Winter months, and the following is prepared in the oven, but it works very nicely on the grill as well, especially over charcoal, if you prefer. Then I'm able to use the oven to bake some tasty low sodium Potato Wedges, recipe below.

I've used sage on Salmon since I was in College. It's one of my favorite herbs, and it lends a delicate and unexpected taste and scent to this dish.

Herbed Salmon


Ingredients

2 Pounds Salmon
5 Dried Sage Leaves
1 Tbs Dried Thyme
1 Pinch of Ground Paprika
1 Pinch of Ground Cayene Pepper

Directions

Preheat oven to 350 degrees. Spray one side of a sheet of aluminum foil large enough to cover all the salmon with cooking spray.

Arrange Salmon on the prepared side of the foil. Sprinkle with sage, thyme, paprika and pepper. Fold foil over Salmon to enclose.

Bake Salmon 20 minutes in the preheated oven, until easily flaked with a fork.

Calories 370; Cholesterol 112 mg; Carbohydrates 1.1 g; Fiber .7 g; Fat 22.1 g;
Sodium 109 mg; Protein 39.4 g.

Rosemary lends a delicious, delicate flavor to these potato wedges. This recipe is perfect for company and it's very low in Sodium. Serves 8.

Oven Roasted Potato Wedges


Ingredients

    • 4 unpeeled baking potatoes (2 pounds)
    • 2 tablespoons olive oil
    • 1 medium onion, chopped
    • 2 garlic cloves, minced
    • 1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
    • 1/2 teaspoon salt, optional
    • 1/4 teaspoon pepper
Directions

Cut potatoes lengthwise into wedges; place in a greased 13-in. x 9-in. baking pan. Drizzle with oil. Sprinkle with onion, garlic, rosemary, salt if desired and pepper; stir to coat. Bake, uncovered, at 400° for 45-50 minutes or until tender, turning once.

114 calories, 5 mg sodium, 0 cholesterol, 19 gm carbohydrate, 2 gm protein, 4 gm fat.

Hi Barry,

I agree, these recipes do sound rich and fattening. However, believe it or not, eating pretty much the same foods as these, at least as far as calories, sodium, fat and sugar intake, I've dropped from 402.8 lbs. on March 21, 2015, when I started by weight loss journal, down to 366.4 lbs this past Sunday, May 31, 2015. In other words, down around 36 lbs. in roughly 10 weeks or 3.6 lbs per week. That leaves me around 146 lbs. short of my goal of 220 lbs.

I also use a lot of Weight Watchers recipes for my sweet tooth. Since these are mostly fish recipes, what goes better with Fish than Key Lime Pie. Here's a Weight Watchers' version of a tasty Key Lime Pie. It's light and creamy, low in fat, sugar and fuss and I think it's delicious.

Fluffy Key Lime Pie


Ingredients

1 package (.3 ounce) sugar-free lime gelatin
1/4 cup boiling water
2 cartons (6 ounces each) Key lime yogurt
1 carton (8 ounces) frozen fat-free whipped topping, thawed
1 reduced-fat graham cracker crust (8 inches)

Directions
  • In a large bowl, dissolve gelatin in boiling water. Whisk in yogurt. Fold in whipped topping. Pour into crust.
  • Cover and refrigerate for at least 2 hours or until set. Serves 8.
  • 1 piece equals 194 calories, 3 g fat (1 g saturated fat), 2 mg cholesterol, 159 mg sodium, 33 g carbohydrate, 0 fiber, 3 g protein.
