Boy you are making me hungry just reading this. There is nothing that a pot a beans cooked with hamhocks and a pan of cornbread wouldn't cure.

Ooooooh yes my friend.  I love slow cooking beans.  All types.  I love beans in any way, form, shape.  You might say I'm full of beans.  LOL

Although soy beans were once thought to be the healthiest of beans, and despite their popularity, it has been found that they are actually very unhealthy.  Please read the following article

Hello Donna,

I will reply to your post starting with a big OOOPS!  I will confess that I planned to look up what edaname was before I made this recipe on Saturday.

To my total embarrassment, I have just found out that edaname is Japanese for soy beans.  LOL  I have just finished telling Peter Fogel and posting an article of how soy beans are actually bad for you. 

Concerns Regarding Soy

This actually surprises me, as I found this recipe on the American Institute for Cancer Research website and thought that I could trust them.  Well, guess we must be careful wherever we get information from.

I would suggest not using the edaname.  I will circumvent that ingredient.

Thank you for your wonderful recipe.  And I see you use sea salt.  Good for you!  We should all be using sea salt.  Regular salt just doesn't do it anymore.  Notice the increase in thryroid conditions?  We just don't get the required amount of iodine in our systems.

I will definitely put your recipe in my file and will make it very soon.  I know others will love it also.  May I share it?

Hi Luella,

Thanks for the article on Soy. It's interesting since all the soy products especially the soy milk products are very popular here. We buy them since my younger daughter is allergic to milk products (lactate intolerant). She does use special pills that allow her to ingest milk products immediately after taking the tablets but for short periods only. 

Sad that the manufacturers are taking advantage of the general population that also use these products due to the decrease in the consumption of milk products.
