Hi Sara,

I was hoping that someone would bring a good Recipe for Irish Soda Bread, and your's sounds great. I just bought some fresh Butter from the Whole Foods Market that will go right with it. They are the only place around here locally that I can find the Straus Family Creamery Brand, and they are the only ones with the low-salt Butter I like that's still so creamy tasting.

I was remembering last St Pat's when I dug out my Recipe for Irish Soda Bread for our old Friend Oreo. I really miss Steven. Haven't seen him around lately, not even over at Facebook.

Here's another old Irish favorite that you might like...

Carrot Soup

  • 2 pounds carrots, peeled and sliced
  • 1 large onion, chopped
  • 6 garlic cloves, chopped
  • 5 whole cloves
  • 4 cups of chicken stock or broth
  • 2 tablespoons olive oil
  • 1 tablespoons fresh lemon juice
  • salt & pepper
  • pinch of sugar
  • 1/4 cup heavy (whipping ) cream
  • Minced fresh parsley or 6 whole sprigs for garnish


Heat the oil in a large saucepan over medium heat.
Add the carrots, onion, garlic, and cloves, and cook until the onion is translucent, 5-8 minutes
Add 3 1/2 cups of the stock or broth, cover, and simmer, stirring frequently
until the carrots are very soft, 25 to 30 minutes.
Remove the cloves from the stock/broth and discard.
Transfer the mixture to a blender or food processor in batches and process until smooth.
Return to the same saucepan and stir in the lemon juice and sugar.
Season with salt & pepper and, if needed, thin with the remaining 1/2 cup stock or broth.
Serve in bowls with a drizzle of cream.
Sprinkle with minced parsley or place a sprig in the center of the cream.

Irish Soda Bread with a Citrus Twist ~

Traditionally served on St. Patrick's Day alongside corned beef and cabbage, Irish soda bread is great any time of the year. Enjoy this version toasted and served with jam for breakfast, or as a side for hearty soups and stews at lunch or dinner.

ingredients

  • 2 3/4 cups all-purpose flour
  • 1 cup whole-wheat flour
  • 1/3 cup sugar
  • 1 teaspoon baking soda
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter or margarine, chilled and cut into 1/4-inch pieces
  • 1/2 cup chopped walnuts
  • 1/4 cup golden raisins
  • 1/4 cup dark raisins
  • 2 teaspoons grated orange zest
  • 1 1/2 cups plus 2 Tablespoons low-fat buttermilk
  • 1 egg, beaten

directions

step 1Preheat the oven to 375 degrees F. Lightly grease a large baking sheet or line it with parchment paper.
step 2In a large bowl, whisk together the all-purpose and whole-wheat flours, sugar, baking soda, baking powder and salt until evenly combined. Add the butter pieces. Using clean fingertips or a pastry cutter, rub the butter pieces into the mixture until it forms coarse crumbs. Then add in the walnuts, both types of raisins and the orange zest; mix to distribute evenly.
step 3Gradually stir in 1 1/2 cups of buttermilk and the beaten egg. With your hands, knead the dough in the bowl until it just comes together and all ingredients are evenly combined. Form the dough into a round (see Chef’s Note) and place it on the prepared baking sheet. Brush the round all over with the remaining 2 Tablespoons of buttermilk. Use a sharp knife to cut an "x" into the top of the round.
step 4Bake in the oven for 35 to 40 minutes or until nicely browned and a toothpick inserted into the center of the bread comes out clean. Remove from the oven and allow the bread to cool on the baking sheet for 10 minutes. Serve warm or at room temperature, plain or with a bit of jam or butter.

chef's notes

To form the dough into a round, gather it into a ball, place it in the center of the baking sheet, and press down to flatten the top slightly into a thick disk.

Zest is the grated peel of a citrus fruit. The fragrant oil in the zest adds flavor to your recipes. To grate orange zest, remove any stickers from your orange and then wash and dry it. Using a medium-fine kitchen grater, grate just the colored peel of the orange, using a bowl or piece of wax paper to catch the zest. Avoid grating the white pith of the orange because this part tastes bitter.

Linda, as I said, the Irish Soda Bread sounds delicious. I'll have to try it this weekend.

Folks, it's Friday here in Thomasville, NC, and Friday, in my household at least, usually means some type of Fish.

Here's a little something different, easy to prepare, and delicious and nutritious to eat...Salmon is high in protein, B-vitamins, vitamin A and is also a rich source of OMEGA-3 oils, which studies show may protect against heart disease.

Salmon and Green Bean Salad with Pasta

Ingredients:
1 can (6 ounces) red salmon
8 ounces small whole wheat or regular pasta shells
3/4 cup fresh green beans, cut into 2-inch pieces
2/3 cup finely chopped carrots
1/2 cup fat-free cottage cheese
3 tablespoons plain nonfat yogurt
1-1/2 tablespoons lemon juice
1 tablespoon chopped fresh dill
2 teaspoons grated onion
1 teaspoon Dijon mustard
Preparation:
Drain salmon and separate into chunks; set aside.
Cook pasta according to package directions, including 1/4 teaspoon salt; add green beans during last 3 minutes of cooking. Drain; rinse under cold running water until pasta and green beans are cool. Drain.
Combine pasta, green beans, carrots and salmon in medium bowl.
Place cottage cheese, yogurt, lemon juice, dill, onion and mustard in food processor or blender; process until smooth. Pour over pasta mixture; toss to coat evenly.

Mix all dry ingredients. Make a well and mix/blend in Buttermilk. Knead, using excess flour on board, shape into a round and let set 10 minutes. Separate in two parts and shape like two very large biscuits, cut a cross in top of each one, brush with melted butter or margarine. Bake at 375 degrees for approximately 40 minutes. Slice with serrated knife and serve with butter. Ummmm!

Phil, I wanted to come back and post the pictures I took of the Irish Soda Bread I made for St. Patrick's Day. The recipe made two loaves like this and it was delicious.

Hi Sara,

Thanks for the great pictures. The Irish Soda Bread looks delicious. I've got just the right butter for it too!

Sorry I missed the end of St. Patty's Day, but Easter is hopping along, just around the corner.
