Hi Luella,

Glad you like it.  Yes, Potato Chips, preferably Low-Salt and Baked, of course.  Actually, my Snacking "Potato" Chips are Veggie Chips...

 

from Nuts Online, but the low-salt Potato Chips taste better with the Recipe.

Phil, Phil, Phil.....

A casserole for breakfast!!!!   Are you kidding?  Ok!  I hear ya, sounds pretty good too.  Might want to add some green chile in that.  Hmmm... makes my mouth water.  But down here in the Chili capital of the world, we'd just warm up a tortilla, put some of that chicken chopped up and warmed over with some green chili and green chili salsa and cheese, wrap it up and you have your portable casserole... course we call it a burrito, but... LOL!!!!

Hi Luella,

These recipes are really making me HUNGRY and it's only 8 AM - Phil, I have that casserole recipe and we make it for family gatherings - it's yummy and always a big hit.

I love trying new recipes - my hubby is a great guinea pig (lol) 

Have to run for now but I will be back for sure.

Hi Joe & Judy,

To be perfectly honest with you, I generally don't eat the Casserole for an early Morning Breakfast.  Usually, I eat either Whole-Grain Cereal or Oatmeal with Fruit. a glass of Juice and of course, Coffee.  However, as you say Judy, this is great for a mid-morning Brunch, especially on the Weekends when most everybody is home.

You did get me thinking about Chili, Joe, although not for Breakfast.  Since I don't eat red meat, how about a...

Three-Bean Turkey Chili

1 pound ground turkey

1 small onion, chopped

1 can (28 ounces) diced tomatoes, undrained

1 can (15 ounces) chickpeas, rinsed and drained

1 can (15 ounces) kidney beans, rinsed and drained

1 can (15 ounces) black beans, rinsed and drained

1 can (8 ounces) tomato sauce

1 can (4 ounces) diced mild green chilies

1 to 2 tablespoons chili powder
 
(I like my Chili HOT, so I add a little Habanero Chile Peppers to mine, although I don't recommend it for everyone.)

Cook and stir turkey and onion in medium skillet over medium-high heat until turkey is no longer pink. Drain fat. Place turkey mixture into slow cooker.

Add remaining ingredients; mix well. Cover; cook on HIGH 6 to 8 hours.
 
Judy, I know exactly what you mean, everybody needs a willing Guinea Pig, especially when you like to experiment a little.
