Hi Luella,

You've got my mouth to watering.  Since I'm primarily Vegetarian, not quite 100% yet unfortunately, you know I eat a lot of Beans.  I love Red Beans & Rice and this sounds absolutely delicious.  I know now what Friday Night's Dinner is going to be.  Everyone else can eat this quick little Shrimp Gumbo and I can get serious with some Red Beans & Rice.  Beano Anyone?

SHRIMP GUMBO

3/4 cup chopped onion
3/4 cup chopped green pepper
1/4 cup chopped celery
1/4 cup water
One 28-ounce can tomatoes
1/4 teaspoon garlic powder
1/4 teaspoon rosemary, crushed
1/4 teaspoon paprika
1/2 teaspoon pepper
1 1/2 cups water
One 6 1/2-ounce package quick cooking long grain and wild rice mix
16-ounce shrimp peeled & deveined
One tablespoon Tabasco sauce

1. In a large saucepan, combine onion, pepper, celery and 1/4 cup water. Bring mixture to a boil and reduce to medium low heat. Cover and simmer 5 minutes.
2. While onions, peppers and celery are cooking, cut up tomatoes.
3. Add tomatoes and liquid from can to onion mixture along with garlic, rosemary, paprika and pepper, and Tabasco.
4. Stir in 1 1/2 cups water and both packets of rice mix.
5. Bring mixture to boil. Add frozen shrimp and return to boil, then reduce to medium low heat.
6. Cover and simmer for 4-5 minutes or until rice is tender and shrimp is pink.
7. Ladle into bowls and serve with crusty French Bread.
