Seasons Greetings to all,

 

 

 

This is a must have at Christmas Time my Great Grandmother Rebecca Daniels' Anastasia Island Lemon Coconut Cake. Remember , this cake will not look like a pretty store-bought one when you are done - but boy is it ever good!

 

Great Granny's Jazzed-up Coconut Lemon Cake

Cake

  • 1/4 lb butter (1 stick)
  • 1/2 cup sour cream
  • 1 2/3 cups sugar
  • 1 teaspoon lemon extract
  • 1 tbsp lemon juice
  • 5 eggs

Icing

  • 4 tbsp lemon juice
  • 2 eggs
  • 1 cup water
  • 2 cups sugar
  • 1 tbsp butter, melted
  • 1 cup coconut, flaked

Preheat over to 300 degrees F.

Cake: Cream butter, sour cream and sugar. Add eggs, then flour, extract and lemon juice. Beat well, then pour into 2 lightly greased and floured cake pans. Bake 45-55 minutes. Let cool.

 

Icing: In a saucepan, beat eggs and sugar. Add lemon juice and butter and mix well. Add water then cook until mixture begins to boil. Remove from heat and add coconut. Let cool, then spread between cake layers and on top.

Makes 8 servings.

 

Christmas was never complete without Great Granny's Lemon Coconut Cake.

Luella !!! I just used your recpe for rosemary roasted turkey tonight.

I have not had time to have Thanksgiving dinner for my husband and I till tonight.  Over the weekend we worked  getting his mother's apartment cleaned and her personal items distributed.  (HARD WORK) and we still are not done.

So.....I am doing a 10 pound ALL NATURAL turkey tonight. I hope it turns out good.  Here is another site with your recipe and all the reviews. Lots of people LOVE this turkey recipe.
