Hello Adlandpro,

Well just one more day till Thanksgiving day.  I know a lot of you will be traveling, so drive safely. 

 Some will be visiting relatives in other city's, some will be busy cooking, and some will be working as I shall be.

To make a long story short, I would simply like to wish you a Happy Thanksgiving and a safe one.

Here is a secret. I've never baked a pie!  So I won't be making Pumpkin Pie this year.  But I do bake GREAT cakes!  Here's a yummy  recipe: Pumpkin Cake with Cream Cheese Frosting.

INGREDIENTS

  • 2 cups white sugar
  • 1 1/4 cups vegetable oil
  • 1 teaspoon vanilla extract
  • 2 cups canned pumpkin
  • 4 eggs
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 cup chopped walnuts (optional)

DIRECTIONS

  1. Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 12x18 inch pan. Sift together the flour, baking powder, baking soda, salt and cinnamon. Set aside.
  2. In a large bowl combine sugar and oil. Blend in vanilla and pumpkin, then beat in eggs one at a time. Gradually beat in flour mixture. Stir in nuts. Spread batter into prepared 12x18 inch pan.
  3. Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool.

Cream Cheese Frosting II

INGREDIENTS

  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup butter, softened
  • 2 cups sifted confectioners' sugar
  • 1 teaspoon vanilla extract

DIRECTIONS

  1. In a medium bowl, cream together the cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners' sugar. Store in the refrigerator after use.

Hi Pat,

Thanks for the fantastic receipe.  I am going to try this one in the next couple of days.  The cake sounds and looks delicious.  I just hope mine looks that good when I get it done.  Have a great Thanksgiving.
