Hey Judy,

We got the cranberry recipe, now I'm in search of a friend with a really great oyster dressing recipe.  Every post I get even hungrier.  How about some good old fashioned yeast rolls that will melt in your mouth, huh.  I will have to check this one out.

Hello, Beryl,

There has to be someone out there with a good Oyster stuffing recipe - There are very few things I won't eat - sorry - but oysters happens to be one of them.

So, I went ot the best place I know for information and came up with this 5 star rated recipe for you!

Oyster Stuffing

 8 servings 
time to make 25 min 10 min prep

1 lb bread, including crusts (10 cups packed and cubed)
1 pint oysters, raw
4-8 tablespoons butter
1 cup celery, finely chopped
2 cups onions, chopped
1/4-1/2 cup fresh parsley, minced
1 tablespoon sage, minced
1 tablespoon thyme, minced
3/4 teaspoon salt
1/2 teaspoon black pepper, ground
1/4 teaspoon nutmeg, freshly grated
1/8 teaspoon cloves, ground
1 cup chicken stock
2 large eggs, well beaten (optional)

Preheat oven to 400, and toast the bread until golden brown on the middle rack. turn into a large bowl.
  1. meanwhile heat butter until melted and foam subsides. add onions and celery and cook about 5 min until tender.
  2. remove from heat and stir in the spices.
  3. stir in the bread cubes, and drained oysters and toss well, until the stuffing is moist, but not packed together, stir in the stock and eggs. put in bird while moist, remoisten and adjust spices as necessary. if cooked in a casserole dish at 350 until heated through with a crust on the outsides, 25 to 40 min.
  4. oyster juice may be used in place of some of the stock.

Hi Judy,

Thanks for the great oyster dressing recipe.  Sorry you don't care for them.  I can eat this whole thing by myself.  I guess I had better double the recipe so others will be able to partake.

Hi All,

How about an untraditional desert for the day.

Easy Chocolate Chip Cheescake Pie

Ingredients:

6 ounces cream cheese softened

1 can (14 oz) sweetened condensed milk

1 egg

1 teaspoon vanilla

1 cup (6 oz) mini semi-sweet chocolate morsels

1 teaspoon flour

1 KEEBLER READY CRUST* Graham Pie Crust

 

Chocolate glaze

1/2 cup (3 oz) mini semi-sweet chocolate morsels

1/4 cup whipping cream

Directions:

1.  In large mixing bowl beat cream cheese on medium speed of electric mixer until fluffy.  Gradually beat in sweetened condensed milk.

2.  Add egg and vanilla, mixing until just combined.  Toss together 1 cup Chocolate morsels and flour.  Fold into cream cheese mixture.

3.  Pour into crust.  Bake at 350 degrees about 30 minutes or until center is almost set.  Cool for 1 hour.

4.  In small saucepan combine 1/2 cup chocolate morsels and cream.  Cook over very low heat, stirring constantly, until chocolate melts and mixture thickens slightly.  Remove from heat.  Pour over cheesecake.  Cool for 30 minutes.  Refrigerate for at least 2 hours.

5.  Garnish as desired.  Store in refrigerator.
