Mary,

Just wanted to post this one during the crazy holidays.  I got it from a Marlboro Cowboy Cookbook several years ago.  It is quite tasty and healthy to make:

            STIR CRAZY CAKE

 

 2 1/2 cups all‑purpose flour

 1 1/2 cups sugar

 1/2 cocoa

 2 teaspons soda

 1/2 teaspoon salt

 2/3 cup cooking oil

 2 Tablespoons vinegar

 1 tablespoon vanilla

 2 cups cold coffee (or cold water)

 1/4 cup sugar

 1/2 teaspoon cinnamon

 

 Put flour, 1 1/2 cups sugar, cocoa, soda and salt into an ungreased 13x9x2 inch metal (or glass) baking pan.  Stir with a fork to mix; form 3 wells in flour mixture.  Pour oil into one well, vinegar in one and vanilla in one.  Pour cold coffee over all ingredients and stir with fork until well mixed.  Do not beat.  Combine remaining sugar and cinnamon; sprinkle over batter. 

 Bake in 350 degree F. oven for 35‑40 minutes.

TEXAS SHEET CAKE 1/2 c. margarine 1/2 c. shortening 4 Tbls. cocoa 1 c. water 2 c. sugar 2 c. flour 1/2 c. buttermilk 1 tsp. soda 1 tsp. cinnamon (optinal) 2 eggs tsp. vanilla Mix sugar and flour together in a large bowl and set aside. In a saucepan, boil together margarine, shortening, cocoa and water. Pour the hot mixture into the flour/sugar mixture mixing well. Beat together in another bowl: buttermilk, soda, cinnamon, eggs and vanilla. Combine all and beat well. Bake in a 11" x 16" pan for 20-30 min at 400 degrees. 5 min. before cake is done prepare icing Icing: 1 lb. box confectioner's sugar 1/2 c. margarine 4 Tbls. cocoa 6 Tbls. milk 1 tsp. vanilla 1 c. chopped pecans or walnuts Sift sugar and set aside. Boil stirring continuously margarine, cocoa and milk. Pour over sifted confectioner's sugar and mix with electric mixer until spreading consistency. Add vanilla and nuts. Spread on cake as soon as it comes out of the oven. Now that's one heaping big cake and every so yummy. Ya'all have a nice big piece, Texas style

The state of Maryland was colonized by George Calvert, of England known as Lord Baltimore. Here is the recipe for Lord Baltimore, Lady Baltimore, and Baby Baltimore Cakes. These were made famous in towns and plantations of Maryland and South Carolina LORD BALTIMORE CAKE Make your favorite golden cake (that means you will have a number of egg yolks in the recipe to give the golden yellow color). Bake in 2 layers. Prepare frosting and Fruit-nut filling. Frosting: beat 3 egg whites til stiff-set aside Boil together to 242 degrees: 2 1/2 c. sugar, 1 tbsp. light corn syrup, 3/4 c. water and 1/4 c. cherry juice (marachino or rugular). Pour slowly as you beat the hot mixture into the beaten egg whites. Beat in 1 tsp. lemon extract and 1/2 tsp. grated orange rind Continue beating til light and fluffy. Take 1/3 of frosting and mix in 1/4 c. each: dried macaaroon crumbs toasted, cut up pecans, toasted cut up almonds, blanced, toasted and marachino cherries, chopped. Spread mixture on the two layers. Put together and frost with the remainder of the frosting. LADY BALTIMORE CAKE Make your favorite white cake baking in two layers. Prepare frosting and fruit-nut filling. Frosting: beat 3 egg whites til stiff-set aside Boil together to 242 degrees: 2 1/2 c. sugar, 1 tbsp. light corn syrup, 1 c. water Pour slowly as you beat the hot mixture into the beaten egg whites. Beat in 1 tsp. vanilla. Continue beating til light and fluffy. Fruit-Nut mixture: Take about 1/2 of the frosting and fold in 1/3 c. raisins, (cut fine), 11/3 c. figs (cut into strips) and 1/2 c. walnuts chopped. Filling should be thick enough to stay on the cake. Spread mixture on both layers. Cover each with a thin layer of frosting. Put the two layers together. Then frost the entire cake with the remaining frosting. BABY BALTIMORE Make your favorite yellow or cake and bake in muffin papers to make cup cakes. When cool, cut in half and use either of the frosting ideas above. These make lovely individual cakes for a nice luncheon.

Hi Mary , I told you i would be back and here I am lol

These recipes are considered sacred to our family and this is the first time they have been offered via Internet .. I have posted the first on in LaNell's forum it is my great- grandmother Jam cake .. it is way too fattening, but it's the HOLIDAYS enjoy !!!!!!!!!These are very special to me please enjoy them as I do every year!!!

OLD FASHION JAM CAKE

Pre heat oven to 350 degrees!!!

Ingredients:

6 eggs

1 1/2 cups butter

2 cups of sugar

1 cup butter milk

2 cups jam / black berry is best but raspberry  is okay

2 cups cooked raisins*

* cook raisins in enough water just to cove them for 20 minutes.

3 1/2 cups flour

2 tsp. soda

1 tsp. allspice

2 tsp. cinnamon

2 tsp. nutmeg

1 cup chopped black walnuts or english if you can't get black

 

Icing:

1 1/2 cups sugar

3/4 cups milk

1/1/2 cups cake batter

Cream eggs, 2 cups sugar and butter milk well.  Mix dry ingredients. Set aside.

Add alternately to creamed mixture with buttter milk. ADD jam, raisins and nuts, mix well.  Reserve 1 1/2 cups of batter for icing.  Pour rest into 3 well greased and floured 9-inch round pans. Bake at 350 degree for 30 - 35 minutes.

Cook reserved batter, 1/ 1/2 cups sugar , and milk until thickened, stir this often as it will stick ... Spread between layers and on on top of cooled cake.

This cake can be kept in the freg for a week or two before serving the old timers would moisten it with nice port wine or brandy .. you can also use purple grape juice if you like.. it was usually severed in a beautiful tin that was kept for just  this special time of the year covered in cheese cloth to keep it from drying out.. Enjoy !!!

Hi Mary,

 I came back once again to add this fruit cake ..!!

I hate fruit cake, but my grand mother said the Holidays wouldn't be the Holidays without it .. this is her mom's recipe.. Great grand mother Mac manis's fruit cake ..

 

 Great Grand Ma Mac Manis's Fruit cake

You will need 1  large tube pan and  2 small ones.. I have no idea how she did this .. ! This yields 7 lbs of fruit cake ...

Ingredients:

1 cup butter

2 cups sugar

4 whole eggs

1 cup blackberry jam

3 cups flour

2 tsp. allspice

3 tsp.cinnamon

2 Tbsp. cocoa

1 cup butter milk

1 tsp. soda

3/4 cup blackberry wine.. good luck finding this! i Use a nice port of something similar.

 I  also make my own blackberry wine during the summer time..

 2 cups black walnuts/ engish will do or pecans if nothing else !

1 cup raisins

1 cup candied cherries

1/2 cup mixed candied fruit mixed

1/2 lb dates dried

1/4 figs dried

1 cup flour

Pre heat oven to 250 degrees

Grease 1  large tuble pan and 2 small ones and line with greased paper cut from brown paper bag.  cut up fruit and chop nuts: mix with 1 cup flour an set aside.  Mix flour , spices and cocoa and set aside.. ( sip a nice port  looking at the mixture ) LOL   cream butter and sugar and beat until fluffy . Add flour mix alternately with buttermilk in which soda has been dissolved, beating constantly. (Hand mixer not recommened for this !)beat constantly. Fold in fruit and nuts, add wine.  spoon into pans. bake at 250 degrees. for 3 hours or until done.. tooth pick test works great. comes out clean.  You can use fruit juice in place of wine if you like!

You will want to keep this moist by adding wine or grape juice as it sets.. ! store  in sealed tins until served.

This is one of the oldest fruit cake reciepes I know of.. enjoy it's the Holdidays.. I believe it might have come over during the great Irish clearing. But that is another story for another time..
