Hi Mary, I remember in childhood that our family would have a light fruit cake and a dark fruit cake baked for the Christmas season. Here is the one for Light Fruit Cake 1 8 oz. package of cream cheese 1/2 pound margarine 1 1/2 cups sugar 4 eggs 1 1/2 teaspoons vanilla 2 1/4 cups cake flour 1 1/2 teaspoon baking powder 1 cup mixed fruit 1/2 cup glazed pineapple 1 cup cherries 1/2 cup chopped pecans (optional) Blend cheese, margarine, sugar and vanilla. Add eggs one at a time. Gradually add 2 cups flour and the baking powder. Combine 1/4 cup flour with the fruit and add to mixture. Put in tube pan. Bake in 325 oven for 1 hour and 20 minutes Remove from oven. Let sit in pan for 5 or 10 minutes. Turn pan upside down and remove cake. Builder99

The  sweet smell of gernaium cake will fill the kitchen as you bake this cake using herbs from your garden.

Geranium* Cake

Make a basic yellow or sponge cake using fresh ingredients or a cake mix.  Wash and dry geranium* leaves to place on greased and floured 13 x 9 cakepan.

Basic yellow cake recipe

Beat: 2/3 c shortening (half butter for flavor), 1 1/2 c. sugar, 3 eggs

Add:  2 1/2 c. flour

        2 1/2 tsp. baking powder

        1 tsp. salt

        1 cup milk

        1 1/2 vanilla

Pour over leaves covering the bottom of the pan.

Bake 350 for 25 -30 min

When cool, turn over onto tray or plate and remove the leaves.

You may choose to sprinkle confection sugar over the leaves before removing to leave a pretty design.

Another option is to make an infusion by soaking the leaves in milk or water.  The geranium flavor then becomes a part of the liquid.

*Scented Geraniums are not the garden variety we  plant to make a showcase of color in our flower beds.

Hello everyone,

Here is my Low Fat Yoghurt Pancakes

1,2,3 Yoghurt Pancakes

All you need to make deliciously fluffy  and healthy pancakes !!!!

Ingredients

1 cup of self raising flour

2 tubs of low fat yoghurt (any flavour)

3 eggs

Method

* Just whisk (beat) the ingredients all together and pour into a frying pan. It's that easy !

* Make them into pikelets for a healthy lunchbox treat !!

* For an impressive but no fuss dessert, top these pancakes with strawberries or other fruits and a dollop of French vanilla yogurt.

Extra yummy and NO FAT !!!!

ANGEL FOOD CAKE

aka: Foam cake, sponge cake, chiffon cake, cornstarch cake, silver cake, snowdrift cake, Ice cream cake, Pennsylvania Dutch Wedding Cake.

With the abundance of cake molds, and the invention of the rotary beater in the early 1800's, egg whites could easily be beaten into high frothy peaks thus creating a light airy enchanting cake. Certainly one would consider it light as air and fluffy as a cloud full of angels.

There are many variations such as peppermint, chocolate, marble, maple, butterscotch, pinapple chiffon, spice, orange. Changing the flavorings creates a cake you will enjoy  eating and serving.

BASIC ANGEL FOOD CAKE

1.Seperate about a dozen eggs for 1 1/2 cups of egg whites.

2. mix 7/8 c. sugar, 1 c. flour, 1 1/2 tsp. cream of tartar 1/4 t. salt (that will be called the flour mixture)

3. Beat the egg whites, 1 /2 t. vanilla with electric mixer with 3/4c sugar using using 2 T. sugar at a time beating for 10 sec. each addition.

4. Beat til high peaks form and the beaten eggs hold their shape.

5. Add 3 T. at a time of flour mixture using spatula. Folding, scraping, gently til mixture disappears with each addition

6. Push batter into ungreased tube pan. Cut through batter with a knife.

Bake 375 degrees 30-35 min.

When it tests done invert on a funnel til cool.

Cut from the edges and bang on hard surface to remove to a plate or tray.

Decorate as you wish or each with ice cream or fresh fruit.

No one will ever know the secret ingredient of this cake---sauerkrau!

SAUERKRAUT CAKE

1 LB. sauerkraut-drain and set aside

beat together for 3 min.
2/3 c. margarine or butter and 1 1/2 c. sugar

Add 3 eggs one at  a time and beat.

add:  2 t. vanilla

1/2 c. regular cocoa

1 t. each salt, baking powder and soda

2 1/4 c. flour

1 c. water

sauerkraut

bake 350 for 30 minutes

FROSTING

1/2 Soft Butter
4 C. Confection sugar
1 Egg White beaten
1 T. Vanilla
Speck of salt
3 squares of melted chocolate

Beat sugar, butter and  beaten  white. Add vanilla, salt and melted chocolate.
