Grain Free Garlic Lime Herb Cauliflower Rice (Cauli-Rice)

Want to go grain free but miss your rice? Try cauli-rice, a delicious substitute for regular rice which can be paired with a wide variety of dishes (the same as regular rice). This recipe is for a garlic herb dish which is very similar to the cilantro-lime rice from Chipotle.

Hi Luella,

Now this sounds delicious. Don't think I'm ready to give up my Miracle Noodles for it, but I'll give it a try. I love Cauliflower and the Italian in me craves the Garlic, so it's a win-win situation for me.

Speaking of Cauliflower, here's one that my Nutritionist/Diabetic Educator got me hooked on a few weeks back. Roasting transforms this Veggie into a tasty snack so mellow and delicious that the family gobbles it up like popcorn.

Cauliflower Popcorn

Place cauliflower in a greased 15-in. x 10-in. x 1-in. baking pan. Drizzle with oil and sprinkle with garlic salt; toss to coat. Bake, uncovered, at 400° for 15-18 minutes or until tender, stirring once. Sprinkle with cheese. Yield: 4 servings.

A 3/4 cup Serving equals 88 calories, 4 g fat (1 g saturated fat), 1 mg cholesterol, 11 g carbohydrate, 5 g fiber, & 5 g protein.

Ooooooooooooh my! Tomorrow's dinner! Tonight is already planned and in the refrigerator waiting to go in the oven. And this is radio show day so that's why dinner is prepared in advanced. But tomorrow................ Oh yum!

Hi Luella,

Hope you enjoy them. I know I like then a lot! Here's one that's not quite as healthy but still it's from Weight Wathchers, so it can't be too bad. Tasty and low carb, this pepperoni pizza casserole uses cauliflower puree as a base instead of pizza dough. A unique texture with a fantastic flavor that helps satisfy your craving for pepperoni pizza in a much healthier way. This healthy casserole comes in at just 5 Points + for 1/4 of the entire casserole, and it's loaded with protein and fiber so I'm pretty sure that I will for sure be making this again and again!

Cauliflower Pepperoni Pizza Casserole

  • 1 medium head of cauliflower, chopped into florets
  • 1 tbsp light butter
  • 1 tbsp half and half
  • 2 tsp garlic powder
  • 1 cup reduced fat mozzarella cheese, shredded
  • 1/2 cup pizza sauce
  • 35 slices Hormel mini turkey pepperoni, or 2oz real pepperoni
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375 degrees. Spray an 8 x 8 baking dish with non-fat cooking spray.
  2. Using a vegetable steamer, or the microwave, steam cauliflower until tender. Transfer hot cauliflower to blender or food processor and add in butter, half and half, 1 tsp garlic powder, ¼ cup mozzarella cheese, 1/ 2 of the pepperoni slices, and salt & pepper. Puree until smooth.
  3. Pour cauliflower puree into baking dish. Use a spatula to even out the surface. Top with the pizza sauce, and use a spoon or spatula to spread it evenly over the cauliflower, making sure not to mix it into the cauliflower. Top with mozzarella cheese, pepperoni and remaining tsp of garlic powder.
  4. Bake for about 20 minutes.
  5. Let cool for about 10 minutes. Cut into 4 equally sized pieces and serve.
