Hi Donna,

Yes, Thanksgiving was especially nice this year. Of course, I ate too much! Time to get back to my Salads.

Here's an easy and delicious salad. I used to love grapefruit and avocado salad, but I can't eat grapefruit anymore, so this cantaloupe is a great substitute.

Avocado and Cantaloupe Salad with Creamy French Dressing

  • 2 tablespoons white sugar or Splenda
  • 2 teaspoons paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon dry mustard powder
  • 3 tablespoons apple cider vinegar
  • 1 clove garlic, minced
  • 1 teaspoon Worcestershire sauce
  • 1 pinch cayenne pepper
  • 3/4 cup vegetable oil
  • 6 cups baby arugula leaves
  • 1/4 cantaloupe - peeled, seeded, and cubed
  • 1 avocado - peeled, pitted, and cubed
  • 1/2 cup toasted slivered almonds
  • Directions

    1. Whisk the sugar, paprika, salt, mustard, vinegar, garlic, Worcestershire sauce, and cayenne pepper together in a mixing bowl. Slowly drizzle in the vegetable oil while whisking rapidly until the salad dressing is thick and creamy.
    2. Place the arugula leaves into a salad bowl, and sprinkle with the cantaloupe and avocado pieces. Drizzle with the salad dressing, then sprinkle with toasted almonds to serve.

    Hi Donna,

    I'm so glad you've been able to find one or two of my Recipes that you could use. I just like to try different foods and different styles of cooking, so I'm always looking for something new and different. Speaking of which, here's one that I just tried a few weeks ago.

    You can prepare this flavorful fava bean salad made with tomatoes, onion, and cucumber tossed with fresh parsley, lemon juice and olive oil in minutes. Makes a great, simple, side dish for traditional Middle Eastern meals.

    Fava Bean Salad

    Ingredients

    • 1 (19 ounce) can fava beans, drained
    • 2 medium fresh tomatoes, chopped
    • 1 small onion, diced
    • 1 cucumber, diced
    • 2 cloves garlic, minced
    • 1/4 cup chopped fresh parsley
    • 1 lemon, juiced
    • 3 tablespoons olive oil
    • 1 teaspoon ground cumin
    • salt and black pepper to taste

    Directions

    1. Combine fava beans, tomatoes, onion, and cucumber in a salad bowl. Toss with garlic, parsley, lemon juice, and olive oil. Season with cumin, and salt and pepper to taste.
