Broccoli and Everything Salad Recipe


WebMD Recipe from the WebMD Weight Loss Clinic

Ingredients:

  • 3 cups raw broccoli, chopped
  • 1 cup seedless raisins
  • 2 strips lean Canadian bacon
  • 1/2 cup red onion, chopped

  • Vegetable Dressing
    1/4 cup low calorie mayonnaise
    1/2 cup plain nonfat yogurt
    1/4 cup sugar
    1/2 teaspoon vinegar

Preparation:

1. In large bowl, combine chopped broccoli, raisins, cooked diced bacon, and raw chopped onions.
2. Combine dressing ingredients and stir well.
3. Add dressing to combined ingredients, and stir to coat evenly.

Yield:

4 servings

Nutritional Information:

Per serving: calories 268; fat 6 g, calories from fat 19%, cholesterol 10.2 g, fiber 3 g, sodium 303 mg.

Hi Donna,

Thanks so much for the wonderful healthy Salad. Sounds absolutely delicious.

I love Salads, especially at this time of year when it's so unbearably HOT!! Here's a favorite of mine. I don't have a photo this time, but it's an easy, colorful fruit salad that brings together all of the berries, melons, and stone fruits of summer, blended together with a spicy yogurt sauce.

Fruit Salad with Spiced Yogurt Sauce

INGREDIENTS

  • FRUIT SALAD

  • ¼ cup SPLENDA® Sugar Blend

  • 2 teaspoons kirsch (cherry brandy)

  • 1½ teaspoons lemon juice

  • 1¼ teaspoons vanilla extract

  • ¾ cup peeled and chopped apple

  • ¾ cup peeled and chopped cantaloupe

  • ¾ cup peeled and chopped honeydew melon

  • ¾ cup seedless green or red grapes

  • ½ cup peeled and chopped plums or peaches

  • ½ cup peeled and sectioned oranges (sections cut in half)

  • ½ cup blueberries

  • ½ cup raspberries

  • ½ cup hulled and halved strawberries

YOGURT SAUCE

  • 2 cups low-fat, preferably Greek, yogurt

  • 2 tablespoons SPLENDA® No Calorie Sweetener, Granulated

  • 1 teaspoon pumpkin pie spice

DIRECTIONS

  1. For fruit salad: Pour 1¼ cups water into a medium saucepan. Add SPLENDA® Sugar Blend and bring to a boil, stirring occasionally. Remove from heat and let cool. Pour into a large mixing bowl and stir in Kirsch, lemon juice, and vanilla.
  2. Add apples, cantaloupe, honeydew, grapes, plums or peaches, oranges, and blueberries to the bowl. Gently combine until well coated. Cover and refrigerate at least 1 hour or up to 3 days.
  3. For yogurt sauce: Combine yogurt, SPLENDA® Granulated Sweetener, and pumpkin pie spice, stirring until SPLENDA® Granulated Sweetener, dissolves.
  4. Just before serving, gently fold raspberries and strawberries into fruit salad. Divide among 6 bowls and top each with yogurt sauce.

Serving Size: 3/4 cup fruit salad, 1/3 cup yogurt sauce.

Per Serving Calories: 170; Calories from Fat: 20; Total Fat: 2.0g; Saturated Fat: 1.0g; Cholesterol: 5mg; Sodium: 35m; Total Carbs: 28g;

JELLO SALAD

1 package of lime Jello
1 lg carrot silvers
2 stalk celery chopped
4 oz of cream cheese chopped in small pcs
1/2 can of crushed pineapple
1/4 cups of chopped English walnuts

Make Jello and ad all the above ingredients and let firm for several hours
Serve square on a slice of lettuce
