First of all, I must apologize for not dropping by more often over the past month or so.  I assure you that I've saved all of the delicious recipes that you've shared, and I am looking forward to sampling each one, especially all of the Bean Recipes.

I have tried this Baked Chicken and Rice Casserole before and it is delicious.  I have also added Shredded Cheddar Cheese on top of the Chicken and loosened the foil during the final five minutes to allow the Cheese to melt.  Then again, I'm a Cheese Freak.
