Cream of Broccoli Soup [1]
From: Marielle, Montreal, Canada
Servings: 4

  • 10 ounces [310 mL] frozen partially thawed broccoli, chopped
  • 1 1/2 cups [375 mL] milk
  • 1 cup [250 mL] light cream
  • 1 teaspoon [5 mL] dried onion flakes
  • 2 cubes beef broth
  • 1/4 teaspoon [1 mL] salt
  • 1 pinch pepper
  • Break-up broccoli into small pieces.
  • Mix together broccoli and 1/2 cup [125 mL] milk, into a blender, until broccoli is completely broken-up.
  • Pour in remaining milk and light cream; add onion flakes, beef broth cubes, salt and pepper.
  • Mix until smooth.
  • Reheat and serve.

Thank you Gaby!  This time of year I am attracted to all sorts of soup and this one looked soooooooo comforting. 

Last night I had the chicken soup that I posted on a prior forum.  Oooooooooh so good......  so warming.... And I had my jammies and fuzzy slippers oh.  yum!

Did you say, a pinch of Velveeta Cheese in Broccoli Soup?

Oh my heavens!  And thank you for that recipe for Honey Wheat Bread!  You know I am planning this for my menu... hmmmm.... looks like next week!  Oh Yum!
