A Soup That Satisfies

Nothing beats a simple and quickly prepared meal – especially during the dead days of winter. Pair this delicious broccoli soup with a hearty slice of whole-grain bread and a colorful salad for the perfect lunch or a light dinner. Broccoli is an excellent source of vitamin C, folate and fiber. It is also a member of the cruciferous family of vegetables, which, according to experts, may help protect against some types of cancer.

Broccoli Soup

Winter Broccoli Soup

1 large celery rib, thinly sliced
1 medium bunch broccoli, florets only, coarsely chopped
1 medium onion, chopped
2 small parsnips, peeled and sliced
4 cups fat free, reduced-sodium chicken broth, or vegetable broth
Freshly ground black pepper, to taste
Chopped fresh parsley (for garnish)

In a deep saucepan, add the celery, broccoli, onion, parsnips, broth and black pepper. Cover the pan and bring the mixture to a boil over medium-high heat. Reduce the heat and simmer until the vegetables are very tender, about 20 minutes.

Uncover and let the vegetables cool for 10 minutes.

In a blender, puree the soup until velvety-smooth. Serve in bowls or pour into mugs. Garnish with parsley, if desired.

Makes 4 servings.

Per Serving: 80 calories, 0 g total fat (0 g saturated fat), 19 g carbohydrates,
3 g protein, 5 g dietary fiber, 480 mg sodium

Walking Garbage CanHi Luella,
  This sounds great.  I know that you also like to cook with beans, therefore, I would like to share with you and your guests a touching poem that my brother Jack wrote.  Have you tissues ready because you just may cry.

                                      Gassy Gus

When Gassy Gus says "I like beans,"
  You can bet your life, that's what he means
He didn't care what kind he ate,
  As long as beans were on his plate.

He ate them all with gross abandon
  Boston baked, or even canned and
Navy, kidney, green or string
  Just to make his britches sing.

Now Gus was just a quiet lad
  As had been his departed Dad,
But beans had done is Daddy in,
  And Mom would see it all again.

But she would first do all she could,
  'Cause she was kind and she was good,
To keep all beans from her dear son.
  Until age nine, he'd seen not one!

But, then one day it came to past,
  That Gussy ate a bean at last.
Some beans had gotten in his soup,
  He ate one and he let a poop!

"What can this funny feeling be?"
  "Can I repeat this act?" thought he.
He searched around his soup for more.
  He ate, and pooped, just as before.

He liked the funny way it felt,
  But didn't care for how it smelt.
His mother at the kitchen sink
  Had heard the noise and smelled the stink.

"O, gosh." she said, "His goose is cooked."
  She saw the pleasured way he looked.
She knew that even if she tried,
  His urge could not be satisfied.

Gus was compelled to leave his home,
  In search of beans, began to roam.
He was his own transportation
  travelling throughout the nation.

With beans for fuel, propulsion jet,
  The more he found, the more he et.
He's cross a streamwithout a boat.
  Putt-putt so fast, he'd stay afloat.

At the tender age of thirty,
  Spirits down, and britches dirty,
Gassy Gus gave up his plight.
  He died without a bean in sight.

Now Gus was not an evil person
  Heaven has a lot that's worse'n
But his was such an awful smell,
  That he was hurried off to Hell.

So to the wise, some sound advice,
  Be always kind, and always nice.
Be prepared for your departing,
  Gassy Gus is down there farting

Hi Luella,

Now you've done gone and got my mouth to watering.  There's definitely nothing better on a Cold Winter night that a steaming hot bowl of Soup.  How did you know that Broccoli was a favorite of mine?  Of course, from time to time, I have been known to cheat a little bit and add just a pinch or two or three of Velveeta Cheese to mine.  You won't tell anybody, will you?

If you would like some melt-in-your-mouth, Honey Wheat Bread to go with this wonderful treat, here's one of my favorite Recipes:


HONEY WHEAT BREAD

INGREDIENTS

1 (.25 ounce) package rapid rise yeast

1 teaspoon white sugar

1/2 cup warm water (110 degrees F/45 degrees C)

1 (12 fluid ounce) can evaporated milk

1/4 cup water

1/4 cup melted shortening

1/4 cup honey

2 teaspoons salt

2 cups whole wheat flour

3 cups bread flour

2 tablespoons butter

DIRECTIONS

Dissolve yeast and sugar in 1/2 cup warm water.

Combine milk, 1/4 cup water, shortening, honey, salt and wheat flour in food processor or bowl. Mix in yeast mixture, and let rest 15 minutes. Add white flour, and process until dough forms a ball. Knead dough by processing an additional 80 seconds in food processor, or mix and knead by hand 10 minutes. Place the dough in a buttered bowl, and turn to coat. Cover the bowl with plastic wrap. Let dough rise for 45 minutes, or until almost doubled.

Punch down, and divide dough in half. Roll out each half, and pound out the bubbles. Form into loaves, and place in buttered 9x5 inch bread pans. Butter the tops of the dough, and cover loosely with plastic wrap. Let rise in a warm area until doubled; second rise should take about 30 minutes.

Place a small pan of water on the bottom shelf of the oven. Preheat oven to 375 degrees F (190 degrees C).

Bake for 25 to 35 minutes, or until tops are dark golden brown. Butter crusts while warm. Slice when cool.

Now that I've got myself all worked up and hungry, I guess I'm going to have to take a break and go eat a bite.
