Hello Linda,

If you like baklava, I would like to give you here a recipe which we used to cook in my village. Most of the villages and little towns in central Greece, make baklava with olive oil instead of butter and only nuts. Here is the recipe. It's not difficult to make it, just follow the directions correctly.

Ingredients :

1 lb fyllo pastry

2-3 cups of ground nuts

1 cup bread crumbs

1 teaspoon cinnamon

½ kilo sugar (500 grammars)

½ kilo thyme honey

300 grammars olive oil

Cloves for decorating and taste

1 ½ cup of water

Directions:

  • Mix the nuts, the bread crumbs, cinnamon and 100 grammars of the sugar.
  • Oil a pan and place 3 oiled sheets of fyllo.
  • Spread a thin layer of the mix and then one more sheet of fyllo.
  • Repeat until you have 3 sheets left, which you use for the top layer. Don’t forget to oil each sheet of fyllo.
  • Cut the baklava in squares (use a sharp knife and cut to within a half inch FROM the bottom of the pan so then when you pour the sauce into the cooled Baklava, the sauce seeps into every layer of the Baklava, but doesn't sit at the bottom.). Decorate with a clove the centre of each square.
  • Bake baklava in medium oven for 45 minutes.
  • Mix the rest of the sugar, honey, lemon juice and 1 1/2 cup of water in a pot and boil for 5 minutes.
  • Remove any froth off the top and pour over the baklava (either the baklava or the sauce must be COOL).
  • Cut all the way thru after the whole thing has completely cooled. Serve cold.

Enjoy it!
