Chocolate coconut joybars..
This makes up to a 14 inch X 8 inch slice tin
1/2 box graham cracker crumbs add cinnamon for extra flavour 1/4 lb butter 1 cup coconut (more if desired) 1 tin condensed milk 1 cup dark chocolate chips or drops
Method: In a bowl - Add cinnamon to cracker crumbs and stir in Melt butter and mix until all crumbs are moist pour out into your slice tin and press to form the base. Refridgerate for awhile to set enough that the crumbs do not lift up or move around for when you add the next layer.
Turn oven on 350o
In a bowl (can use the same bowl just dust out with a paper towel) pour the tin of condensed milk Add the coconut to the milk and mix in.
Take spoonfulls of the mixture and drop all over the base in different places - this method makes it easier to spread. Spread the mixture evenly all over the base. Bake in the oven for about 10 - 15 minutes. (does not have to be cooked the warmth makes it easier to spread the chocolate icing.
In a saucepan or doubleboiler place the chocolate chips and a couple of drops of water or milk. Slowly melt the chocolate into a pourable consistancy Drop chocolate over the top same way you did the coconut mix and spread like frosting.
Leave to set and eat..
