Potato Salad with Beef Stix
Ingredients
2 cups cubed Jerky Beef Stix any Flavor
(or shredded Buffalo Jerky)
2 cups cubed red potatoes, cooked
1/2 cup chopped green pepper
1/2 cup thily sliced celery
1/4 cup chopped onion (green spring onions are great)
2 tablespoons chopped pimientos (or stuffed green olives)
2 tablespoons vinegar
2 teaspoons prepared horseradish
1/2 teaspoon sea salt
1/8 teaspoon pepper
2 tablespoons chopped fresh parsley
Directions: In a large bowl combine Jerky, potatoes, green pepper, celery, onion and pimientos. Combine the next five ingredients, mix well. Pour over ingredients in mixing bowl and toss to coat. Cover and refrigerate for at least 1 hour. Serve on lettuce or spinach, sprinkle with parsley.
Feel free to add any other ingredients you like in your potatoe salad such as real mayonaise....
Lettuce Leaves (optional, spinach leaves are good too)
