The recipe for The BGE....it's called that because we got tired of calling it the Big Giant Egg.
Preheat your oven to 350.
Start with 12 raw eggs in a big bowl, mixed well with a fork
Stir in lots of shredded cheese, I don't measure (cheddar or a mix of yellow-orange cheese is best because baked eggyolks sometimes turn a little greenish, you need orange cheese to disguise that)
Add some pre-cooked thawed meatballs, cut into small pieces, or diced smoked sausage
Then spray a 9x13 pan with non-stick spray, and pour in the egg mixture and bake it for about 30 minutes.
Cut into 8 squares and serve between toast as a sandwich with butter or mustard, yes it's great with mustard... or for you ketchup lovers, ewww...ketchup! Or you can just eat it by itself without making a sandwich. It's great the next day also, some people think it's better the next day. Keep leftovers refrigerated.
