I just tried making these biscuits with all coconut flour, which I wondered about, beleive me when I say they are not good. It almost like eating flour, all other recipes with coconut flours takes a lot of eggs.
Here is a recipe I found for coconut flour biscuits.
COCONUT FLOUR BISCUITS - ⅓ cup coconut flour (Higher altitudes may require more.)
- 4 tablespoons butter or ghee
- 4 organic eggs
- ½ teaspoon baking soda
- pinch of salt
- 1 teaspoon raw honey (optional)
- Preheat oven to 400 degrees.
- Combine all ingredients in bowl.
- Stir until blended. (Use hand mixer, or food processor if desired.)
- Allow to sit for 1-2 minutes to allow dough to expand and become cohesive.
- Form into "patties" and press onto baking stone or cookie sheet with parchment paper.
- Bake at 400 degrees for 15 minutes or until done.
