A Tasty Fish Dish To Start With

Hi My Friends,

I've been away for quite awhile and I've missed you all. I'm back now to stay and hope that all of my Friends will stop by to visit once again.

In this dish, a tangy mixture of Dijon mustard and Italian dressing seasons both the broiled snapper and the sautéed vegetables. This can be served with either boil-in-bag brown rice or with some homemade crusty dinner rolls. Serves 4.

Red Snapper Over Sauteed Spinach & Tomatoes

Ingredients

3 tablespoons country-style Dijon mustard
3 tablespoons reduced-fat Italian dressing
4 (6-ounce) red snapper fillets
Cooking spray
1/2 cup chopped onion
1 (10-ounce) package fresh spinach (about 10 cups)
1 cup chopped red or yellow tomato
4 lemon wedges
Preparation

Preheat broiler.

Combine mustard and dressing, stirring with a whisk.

Arrange fish, skin side down, on a foil-lined baking sheet coated with cooking spray. Brush half of mustard mixture over fish. Broil fish 8 minutes or until fish flakes easily when tested with a fork.

While fish cooks, combine onion and remaining mustard mixture in a large nonstick skillet over medium heat. Cover and cook 2 minutes. Add half of spinach; cover and cook 1 minute or until spinach wilts. Add remaining spinach and tomato; cover and cook 1 minute or until spinach wilts. Stir well to combine. Serve fish over spinach mixture; serve with lemon wedges.

Hello Friends,

Since we started out with a Fish dish and since that's mostly what I eat these days, here's another dish that you might like. This great alternative to the traditional greasy fish fry is beautifully golden on the outside, flaky and tender on the inside, and it's virtually foolproof to make. Serve with a baked potato and you choice of vegetables. A perfect meal for two.

Fake-fried Fish

Ingredients

4 medium Fish fillets
1 1/2 cup(s) seasoned bread crumbs
2 tsp parmesan cheese
2 egg whites
1 dash salt
1 dash pepper

Preparation

1. In large bowl, combine salt, pepper, bread crumbs and cheese.

2. Coat fish with egg whites and drain off excess.

3. Roll fish in crumb mixture and coat well.

4. Spray baking pan with non-stick spray. Place fish on pan.

5. Melt 1/4 cup of butter and drizzle on top of fish.

6. Bake for 20 minutes at 350 or until fish is flaky.

Hi Phil,

Here is great desert and good for you too. I am in to coconut in all forms.

I find that this this coconut bar recipe tastes a bit like a macaroon bar. If you want to jazz up your coconut bars and get really decadent, try drizzling them with dark chocolate.

Coconut Bars

  1. Mix eggs, coconut milk, oil, honey, vanilla and stevia in a food processor
  2. Pulse in almond flour, coconut flour, shredded coconut and salt
  3. Transfer ingredients into an 8 x 8 inch baking dish
  4. Bake at 350° for 30 minutes
  5. Cool for ½ hour, then place in refrigerator and serve when chilled
Makes 16 bars
