Moroccan Chicken Salad

This spiced up version of chicken salad is based on the Moroccan dish, bistilla, often made to mark special occasions. It features simple ingredients, transformed by cinnamon, ginger and turmeric into a richly flavorful dish. Orange and golden raisins add sweetness to savory chicken breast. And forget about the mayonnaise; this unique dressing is made with orange juice, olive oil and an abundance of spices, making this a flavorful and low calorie entrée.

Hi Luella,

Thanks for the wonderful Moroccan Chicken Salad recipe. As I continue on my weight loss struggle, a healthy and tasty recipe such as this one is just what the Doctor ordered.

Nowadays, I buy all of my spices fresh from Spices for Less. Hope you all will check them out. They have really saved me some money and I'm eating much healthier too.

Hi Luella,

Thanks for the encouraging words. Got a long way to go, but with God's help and support from my family and friends I'll make it. When I went to the Doctor back in March of this year, I weighed in at 450 lbs. This morning I was down to 413.6 lbs. Also my Sugar level is staying in the low 80's. Thank You Jesus.

Bless your heart Phil, and please know that my prayers are with you. You've lost a good deal of weight since March.............. Bravo!

If I'm not poking my nose where it doesn't belong, could I ask what type of diet you're on? Or more importantly, what foods you are eating? I don't like using the word "diet" when losing weight. Depending on how it's used, it's a negative word and can result in ultimate "failure". But permanently changing your eating habits works.

There was a time, a little over ten years ago when I was REALLY overweight. I'm 5'1" and weighed over 190 pounds. Just by changing my eating habits, I was able to lose the excess weight,, I would say in a year, or a little more than a year. You don't want to lose weight too quickly, not good for your heart. Easy does it, slow and steady is best. But what I'm trying to say, I got down to where I am now, 120 lbs, and by continuing to eat healthy, I never regained that weight.

Another personal question............ Are you also exercising? And I don't mean strenuous exercise.......... Say, for example taking walks? That's important too.

Anyway my friend, please know that I am here for you should you need me.
