Here's A Little Something Fishy For Friday
7/11/2013 5:11:38 PM

Hello My Friends,

I realize that I've been remiss in stopping by to visit, but sometimes life gets in the way of our good intentions. Whatever, I recently had some of the best Salmon that I have ever tasted and I wanted to share it with y'all.

A simple soy sauce and brown sugar marinade, with hints of lemon and garlic, is the perfect salty-sweet complement to these rich salmon fillets. Even my little loves this recipe.

Grilled Salmon

Season salmon fillets with lemon pepper, garlic powder, and salt.

In a small bowl, stir together soy sauce, brown sugar, water, and vegetable oil until sugar is dissolved. Place fish in a large resealable plastic bag with the soy sauce mixture, seal, and turn to coat. Refrigerate for at least 2 hours.

Preheat grill for medium heat.

Lightly oil grill grate. Place salmon on the preheated grill, and discard marinade. Cook salmon for 6 to 8 minutes per side, or until the fish flakes easily with a fork. Serves 6.

Have A Terrific Weekend,

Phil

Great to see you Phil.

You are missed.

Lost me on this one.

I know that I'm odd but I love cold salmon but hate it hot.

Also, love apples or cooked HOT apple but hate cold cooked apple.

Strange aren't I?

Roger

Hi Roger,

Good to see you again.

I don't think of it as odd or strange, I'd just say you're unique! That's what keeps life interesting.

Here's a little Cold Salmon recipe that I like...

Salmon Salad

  • 2 pounds cooked salmon, chilled
  • 1 cup small-diced celery (3 stalks)
  • 1/2 cup small-diced red onion (1 small onion)
  • 2 tablespoons minced fresh dill
  • 2 tablespoons capers, drained
  • 2 tablespoons raspberry vinegar
  • 2 tablespoons good olive oil
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper

Break the salmon into very large flakes, removing any skin and bones, and place the salmon in a bowl. Add the celery, red onion, dill, capers, raspberry vinegar, olive oil, salt, and pepper. Season, to taste. Mix well and serve cold or at room temperature.

Hope that you enjoy this.

Have A GreatWeekend,

Phil
