This is a recipe I used to make years ago but lost the old cookbook I found it in. I used to make this all the time at Christmas. This past Christmas the subject came up and my daughter had a handwritten copy, on a sheet of paper, that I had given her at some time. I have no idea when I wrote it and gave it to her but I copied it and now I can make it at Christmas again. I had searched all kinds of recipe sites trying to find it but never could so now I have a copy.


Orange Caramel Fudge


1/3 to 1/2 cup finely cut orange peel (zest)
4 cups sugar
1 2/3 cups evaporated milk
1/4 cup Butter
I cup chopped walnuts (English)


Grate orange peel with very small amount of white of 1 large orange
Place 1 cup of sugar in large very deep iron skillet.
Place skillet over very low heat.
Place remaining 3 cups sugar, evaporated milk and butter in heavy 3 quart sauce pan. Cook over medium heat until sugar is dissolved, stirring frequently.
Cook to 234º, stirring occasionally.
Remove from heat.
Turn heat to medium under 1 cup sugar in skillet; cook until sugar is completely
melted and turns golden brown, stirring constantly on sides only.
Remove skillet from heat.
Gradually stir the first mixture into the caramelized sugar, blending thoroughly.
Add orange rind and walnuts. Beat until mixture begins to stiffen and looks fudge like.
Turn into a lightly buttered 8" square pan and spread evenly.
Cool thoroughly.
Cut into squares.
Yields about 2lbs.
