Hello Everyone,

This easy pasta dish gets its luxurious creaminess from mascarpone, an Italian cream cheese.

Linguine with Lemon-Garlic Shrimp

Kosher salt
1/2 lb. dried thin linguine
1 lemon
1 lb. extra-large (26 to 30 per pound) shrimp, peeled and deveined
Freshly ground black pepper
2 Tbs. unsalted butter
3 medium cloves garlic, thinly sliced (1 Tbs.)
1/8 to 1/4 tsp. crushed red pepper flakes
1/4 cup dry white wine, such as Pinot Grigio
1/2 cup mascarpone cheese
2 Tbs. thinly sliced chives

Bring a large pot of well-salted water to a boil over high heat. Cook the linguine in the boiling water according to package directions until al dente. Reserve about 3/4 cup of the cooking water and then drain the pasta.

Meanwhile, finely grate 1-1/4 tsp. of zest from the lemon and squeeze 2 Tbs. of juice. Toss the shrimp with 1/2 tsp. of the zest and 1/4 tsp. each salt and pepper.

In a 12-inch skillet, melt the butter over medium-high heat until the foam subsides. Add the garlic and red pepper flakes and cook until the garlic just begins to brown, about 1 minute. Add the shrimp and cook until just opaque, about 3 minutes. Add the wine and lemon juice, bring to a boil, and cook until slightly reduced, 1 minute.

Add the drained pasta, mascarpone, and 1/2 cup of the cooking water. Toss well, adding more cooking water as needed, until the pasta and shrimp are coated and the sauce looks creamy. Remove from the heat. Toss in the remaining 3/4 tsp. lemon zest and the chives. Season to taste with salt and pepper and serve.
Serves 3.

Serve with a side of Sautéed Broccoli Raab. Mildly bitter broccoli raab is tempered with sweet balsamic vinegar, garlic, anchovies, and a touch of hot chile. Even if you think you don’t like anchovies, don’t leave them out—their flavor blends into the background and gives the dish a savory edge that is absolutely delicious.

Sautéed Broccoli Raab with Balsamic Vinegar

1/4 cup aged balsamic vinegar
Kosher salt
2 large bunches broccoli raab (2-1/2 lb.), thick stems trimmed, leaves and florets rinsed well
4 medium cloves garlic, lightly crushed and peeled
3 Tbs. extra-virgin olive oil
4 oil-packed anchovy fillets, finely chopped
1/4 tsp. crushed red pepper flakes
Freshly ground black pepper

In a small saucepan, boil the vinegar over medium-high heat until reduced by half, about 4 minutes. Set aside.

Bring a large pot of well-salted water to a boil over high heat. Have a large bowl of ice water ready. Blanch the broccoli raab in the boiling water for 3 minutes (the water needn’t return to a boil). Drain it and transfer to the ice water to cool. Drain well and gently squeeze the broccoli raab to remove excess water.

Heat the garlic and oil in a large skillet over medium heat until the garlic begins to turn golden, 2 minutes; remove and discard the garlic. Add the anchovies, mashing them with the back of a wooden spoon until fragrant, 30 seconds. Add the pepper flakes and cook, stirring constantly, for 5 to 10 seconds. Add the broccoli raab and cook, stirring often, until tender and heated through, 3 to 4 minutes. Drizzle with the vinegar and season to taste with salt and pepper. Transfer to a platter and serve. Serves 6-8.

Hello My Friends,

This dish features a very thick and hearty meat sauce that's simmered in the slow cooker.

Slow Cooker Bolognese

Ingredients

  • 2 tablespoons olive oil
  • 1 cup finely chopped baby carrots
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 pound lean ground beef
  • 1 cup whole milk
  • 1 (28 ounce) can crushed tomatoes
  • 1 (6 ounce) can tomato paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup whole milk
  • 1/4 cup grated Parmesan cheese

Directions

  1. Heat the olive oil in a large skillet over medium heat, and cook and stir the carrots, onion, and garlic until tender, about 10 minutes. Place the ground beef into the skillet and cook and stir, breaking up the meat as it cooks, until browned. Drain off excess fat from the skillet, and pour in 1 cup milk. Bring to a simmer, reduce heat to medium-low, and simmer until the milk is absorbed, about 15 minutes.
  2. Place the beef mixture into a slow cooker, and set the cooker to High. Stir in crushed tomatoes, tomato paste, salt, pepper, basil, oregano, and red pepper flakes, and cook for 2 hours. Mix in 1/2 cup milk and Parmesan cheese, stir well, and cook for 2 more hours. Serves 8.

Hope that your Valentines Day is turning out super!

Since we're talking Italian, I guess that Pizza would fill the bill. Make this pizza for your Valentine! The rosemary dough is made in a bread machine, and then made into three heart shaped pizzas.

Valentine Pizza

Ingredients

  • 3 cups bread flour
  • 1 (.25 ounce) envelope active dry yeast
  • 1 1/4 cups warm water
  • 3 tablespoons extra virgin olive oil, divided
  • 3 tablespoons chopped fresh rosemary
  • 1 (14 ounce) can pizza sauce
  • 3 cups shredded mozzarella cheese
  • 2 ripe tomatoes, sliced
  • 1 zucchini, sliced
  • 15 slices vegetarian pepperoni
  • 1 (2.25 ounce) can sliced black olives

Directions

  1. Place bread flour, yeast, water, and 2 tablespoons olive oil into the bread machine pan in the order recommended by the manufacturer. Select the Dough setting. Press Start. When the dough is finished, knead rosemary into the dough.
  2. Preheat oven to 400 degrees F (200 degrees C).
  3. Divide the dough into three portions. Shape each piece into a heart shape about 1/2 inch thick. Brush with remaining olive oil, and spread a thin layer of pizza sauce on each pizza. Sprinkle cheese over pizza sauce, and arrange tomatoes, zucchini, pepperoni, and sliced olives on top.
  4. Bake for about 15 to 20 minutes, or until cheese has melted and crust is browned. Yields 3 Medium Pizzas.
