Pork Tenderloin

I have a simple recipe I use for making pork tenderloin. I made this for dinner today and it was very tender and tasty.

Saute chopped onion in olive oil for several minutes, then add chopped garlic and saute for a couple more minutes. Place your pork tenderloin on top of the mixture and brown all sides. Add salt, red pepper or black pepper, and/or garlic salt to taste. Add white wine. I use enough to keep the bottom of the skillet covered throughout the process.

Cover the skillet and continue to cook the tenderloin on medium heat. Keep an eye on it to make sure the wine doesn't cook out and leave the skillet dry. Turn the tenderloin every 5 minutes so all sides will be moistened.

It took about 20 minutes to cook the tenderloin. Let it rest for a few minutes before slicing. Add the liquid and onion/garlic mixture to the top of the slices for great flavor.

I made a box of couscous and boiled some asparagus in a small amount of water for 6 minutes for my two side dishes. Yummy!
