Here is a meatless dish, but if you want to add meat, go for it!
Veggie Pasta
1 box (16 oz.) penne pasta 1 bag (16 oz.) frozen peas and carrots 1 can (10 oz.) cream of chicken soup 1 cup chopped sweet onions 1/2 cup red bell peppers, chopped 1/2 cup sliced mushrooms 1/2 cup celery, chopped 1 tsp. garlic salt 1 tsp salt and pepper 1/4 cup butter
Instructions: Saute onions, celery, bell pepper and mushrooms in olive oil. Cook noodles for 5 minutes in water with a touch of butter or olive oil added. Toss in the frozen peas and carrots, and cook for another 5 minutes. Drain off the water and transfer all ingredients to a large bowl. Stir in the spices and soup. Transfer to a serving platter and sprinkle with Parmesan cheese.
