Orzo with Spinach and Feta Cheese Ingredients: 1-1/2 cups orzo pasta 2 teaspoons olive oil 1 medium onion, minced 2/3 pounds frozen chopped spinach, thawed and drained 1/4 cup feta cheese/grated, crumbled Freshly ground black pepper to taste Cooking Instructions: Cook the orzo according to package directions. Drain. Heat the olive oil in a skillet over medium high heat. Add the onion and saute for 5 minutes. Add the spinach and saute for 4 more minutes. Toss the onion spinach mixture with the hot orzo. Add the feta cheese and ground pepper. Toss well. Note: I would think you can substitute your favorite cheese for the feta. I have never used feta cheese.
