Hello Donna,

This recipe sounds really good and I love rice.
I make my Spanish rice a little different.

1 cup of uncooked rice, white or brown
2 tablespoons of olive oil
2 cloves of fresh garlic
1/4 teaspoon of salt
3 or 4 green onions finely chopped
1 small can of tomato sauce
2 cups of water

Heat oil, add garlic cloves and brown them a little
Add rice and brown it
Add green onions and tomato sauce
Stir really good
Add salt
Add water, stir it good one last time
Let simmer for about 15-20 minutes until rice is done.
DO NOT stir while it's cooking it will make the rice stick together.

On a lazy night when the rice is almost done I will add a package of slice hot dogs on the top of the rice.  The kids love it.
