Recipe: Best Bean Chili
Servings: 6
Preparation Time: 15 min.
Cooking Time: 35 min.
 
Ingredients:
  • vegetable cooking spray
  • 1 Lbs. lean ground beef
  • 1-1/2 cups onions\raw, chopped
  • 1 cup green bell pepper\raw, chopped
  • 1 tsp. garlic, minced
  • 7-1/2 tsp. chili powder
  • 1-1/2 tsp. ground cumin
  • 1 Lbs. canned red kidney beans, rinsed and drained
  • 1 Lbs. canned pinto beans, rinsed and drained
  • 2 Lbs. tomatoes\raw, diced and chili-seasoned
  • 2 Tbs. brown sugar
  • 1 Tbs. unsweetened cocoa
Cooking Directions:
Spray large saucepan with cooking spray; heat over medium heat until hot. Cook ground beef until browned 5-8 minutes, crumbling with a fork. Add onions, bell pepper, and garlic; cook 5 minutes longer. Add remaining ingredients; heat to boiling. Reduce heat and simmer, covered, 20-30 minutes. Courtesy: American Dry Bean Board

"Chick-Chick" Salad


Recipe Summary:

Preparation Time:  15 minutes

Number of Servings:  4

Cups of Fruits and Vegetables Per Person:  0.50


Ingredients:
3/4 cup water
1/2 tsp curry powder
2/3 cup couscous
1 cup cubed cooked chicken breast (about 1/2 lb boneless, skinless)
1-1/2 cups cooked (1/2 cup dry) or 1 can (15 oz) garbanzo beans, drained
1/2 cup chopped red cabbage
1/4 cup thinly sliced celery
1/4 cup plus 2 Tbsp fresh orange juice
1 tsp grated orange rind
2 tsp olive oil
1/4 tsp pepper

Directions:
In a medium saucepan, bring water, salt, and curry powder to a boil; stir in couscous. Remove from heat; let stand, covered, 5 minutes. Fluff with a fork. Add chicken, garbanzos, cabbage, onions, and celery. Combine orange rind, orange juice, olive oil, and pepper in a small bowl; stir with a wire whisk until blended. Add to couscous mixture; toss well. Serve immediately or chill.

Black Bean Soup with Veggies


Recipe Summary:

Preparation Time:  10 hours

Number of Servings:  8

Cups of Fruits and Vegetables Per Person:  0.50


Ingredients:
3 carrots, thinly sliced
2 celery ribs, sliced
1 onion, chopped
4 garlic cloves, diced
20 oz can black beans, rinsed and drained
28 oz can low sodium vegetable broth
15 oz can crushed tomatoes
1-1/2 tsp dried basil
1/2 tsp dried oregano
1/2 tsp cumin
1/2 tsp chili powder
1/2 tsp hot pepper sauce

Directions:
Combine all ingredients in slow cooker. Cover. Cook on LOW for 9-10 hours.
