Oatmeal Muffins

Here is another healthy-sounding recipe for oatmeal muffins. You can make it healthier by using whole wheat or other whole grain flour, less sugar, butter instead of margarine, or a healthy oil.

 

1 pint sour cream

2 tsp. baking soda

1 cup softened margarine or butter

1 1/2 cup sugar ( or less )

2 eggs

2 tsp. vanilla

1/2 tsp. salt

2 cups flour

1 tsp. cinnamon

1 1/2 half cups oatmeal

3/4 cup raisins

3/4 cup chopped nuts

 

Preheat oven to 375 degrees. Mix sour cream and baking soda in small bowl and set aside. Cream margarine or butter with sugar until light and fluffy. Add eggs and vanilla. Alternate sour cream mixture and flour. Add remaining ingredients and stir until blended. Fill tins 2/3 full. Bake for 20 minutes or until they spring back. Makes about 3 dozen.

Hi Donna,

This one sounds supper good.  I bet this would be good with apples in it too.
Just may have to try it all ways.

Hi Myrna,

I think adding apples sounds good. It would add fiber, too. We can always use more fiber. :)
