Morning Glory Muffins

This is another recipe I haven't tried yet, but it sounds delicious and healthy.

2 cups flour

1 1/4 cups sugar  (or less)

2 tsp. baking soda

2 tsp. cinnamon

1/2 tsp. salt

2 cups grated carrots

1/2 cup raisins

1/2 cup chopped nuts

1/2 cup coconut

1 apple, peeled and grated or chopped

3 eggs

1 cup vegetable oil

2 tsp. vanilla

 

Mix dry ingredients together.  Stir in carrots, raisins, nuts, coconut and apple.  Beat eggs with oil and vanilla, then stir into mixture. Spoon into well-greased or paper-lined muffin cups, filling to the top. Bake at 350 degrees for 20 minutes.

Hi Danna,

Yummm, these really sound good.  I like all the goodstuff in these.  Cut out half that sugar and  yummy in the tummy.

Hi Myrna,

I agree with you about the sugar. When I bake I usually cut the sugar in half. It is still sweet enough for my taste, and healthier.
