I use a blend of dirt, manure, compost, coffee and tea grounds, eggshells, and shredded cardboard and paper in the raised beds. Every month I add more coffee and tea grounds and ground up eggshells. About every 2 to 3 months I add some composted soil to them, and after harvesting, I re-mix it with fresh manure, cardboard, paper, and compost.
I also rotate what grows in each bed. Every growing season, I plant something different in each bed, unless it's something that grows there until I deplete it, such as onions and garlics. Those will grow in the same bed for several seasons before I have to replant. The evergreen onions should never have to be moved, because those I will mainly harvest the greens from.
