Hi Phil,

What a dish! It sounds good but I am lactose intolerant and don't care for eggplant so will skip this one. I am sure there are other members of Adlandpro that will like it, so thanks for posting it.

When I go to one of the Greek restaurants in Illinois on my way to Wisconsin, I love their fried chicken. It tastes like broasted chicken. I don't know if that is a Greek dish, or not, or an Americanized version of Greek food.

YUM!!!!!!

THANK YOU DONNA!! I LOVE GREEK SALADS. We have a Greek Orthodox Church in my city and they have a lovely weekend festival in the early fall. Hubby and I always eat a Greek Salad. Don't they look healthy and delicious!!

This recipe is a little different than yours......

Greek Salad « The Plagiarist’s Kitchen

Ingredients

2 cucumbers, cut into 1/2-inch cubes
2 pounds tomatoes, cored and cut into 1/2-inch cubes
1 medium red onion, chopped, then rinsed and drained
1 1/3 cups coarsely chopped parsley
1 1/3 cups drained pitted kalamata olives, halved if large
1/2 cup extra-virgin olive oil
1/2 cup lemon juice
1 1/2 teaspoons dried oregano
1 pound feta cheese
Salt and fresh-ground pepper

Directions

In a large bowl, combine cucumbers, tomatoes, onion, parsley, and olives.

In a small bowl, mix olive oil, lemon juice, and oregano.

Break feta cheese into about 1/2-inch chunks and add to cucumber mixture. Add dressing and mix gently, adding salt and pepper to taste.

Plagiarist’s Notes:

Really enjoyed this. I made up a small batch of homemade pita chips to go with it.
