Veggie Pasta

Here is a meatless dish, but if you want to add meat, go for it!

Veggie Pasta

1 box (16 oz.) penne pasta
1 bag (16 oz.) frozen peas and carrots
1 can (10 oz.) cream of chicken soup
1 cup chopped sweet onions
1/2 cup red bell peppers, chopped
1/2 cup sliced mushrooms
1/2 cup celery, chopped
1 tsp. garlic salt
1 tsp salt and pepper
1/4 cup butter

Saute onions, celery, bell pepper and mushrooms in olive oil. Cook noodles for 5 minutes in water with a touch of butter or olive oil added. Toss in the frozen peas and carrots, and cook for another 5 minutes. Drain off the water and transfer all ingredients to a large bowl. Stir in the spices and soup. Transfer to a serving platter and sprinkle with Parmesan cheese.

Hi Donna,

That sounds absolutely delicious. I make a similar Sauce, however, once again, I take the simple way out and use my Crockpot.

Vegetable Pasta Sauce

2 cans (about 14 ounces each) diced tomatoes

1 can (about 14 ounces) whole tomatoes, undrained

1-1/2 cups sliced mushrooms

1 medium red bell pepper, diced

1 medium green bell pepper, diced

1 small yellow squash, cut into 1/4-inch slices

1 small zucchini, cut into 1/4-inch slices

1 can (6 ounces) tomato paste

4 green onions, sliced

2 tablespoons Italian seasoning

1 tablespoon chopped parsley

3 cloves garlic, minced

1 teaspoon salt

1 teaspoon red pepper flakes (optional)

1 teaspoon black pepper

Hot cooked pasta

Parmesan cheese and fresh basil (optional)
Combine all ingredients except pasta, parmesan cheese and basil in slow cooker, stirring until well blended. Cover; cook on LOW 6 to 8 hours. Serve over cooked pasta. Garnish with Parmesan cheese and fresh basil.

That recipe sounds good, too, Phil. I never thought of making pasta sauce in the slow cooker. I'll bet the veggies are really soft and flavorful fixed that way.

Yes, I'll be trying both of those. But I do like the idea of using my crock pot. It is so easy. Throw everything in in the morning, wash up, set it going, and the evening meal is ready.
