Donna, my son got my started on Black Beans. There is a recipe I got from watching PBS some years ago that is really good. However, now that I look for more simple ways to prepare meals, I have found that all you need to do to canned black beans is heat them straight from the can - add spices as preferred and serve them with a dollop of sour cream or cottage cheese.
Your recipe sound delicious. The poblano (not sure the spelling on that one) peppers are delicious grown in the garden also.
I will have to get some food graphics. Myrna, can I borrow some from you - that looks good!!
