Well, I did it, Donna.

Just in time for St. Patrick's Day - and it was delicious. It took FOREVER....every bit of the three hours for three pounds and then extra time for the veggies. Kind of fun for a once a year thing, though, and next time I'll try and remember to take all the extra veggies out of the liquid as soon as they are done rather than serve up our meal and leave them to soak up all the extra liquid.  Whoops!

Hi Donna and everyone.

I made it last night, my very first time.  I posted about it in my St patty days party thread.  Let's Celebrate St. Patrick's Day!

The only thing I added was some Guiness Beer, garlic clove and little bit of parsley.

Crock Pot Corned Beef and Cabbage

St Patty's Day meal made easy! Serve with Rye bread or my Irish soda bread Irish Soda Bread 1. And some green beer (beer with green food coloring added. In the pictures is the corned beef topped with the pineapple glaze #57813.

SERVES 8 -10 (change servings and units) 

 

Ingredients

Directions

  1. Place carrots and parsnips into bottom of crock pot.
  2. Add corned beef brisket & onions.
  3. Mix together beer, water, sugar, dry mustard, garlic powder, sprig of thyme, salt and pepper.
  4. Pour into crock pot.
  5. Cover & cook on low heat for 8 hours.
  6. If carrots, parsnip and onions are tender you can remove them, placing them in a covered dish. Add cabbage wedges and potatoes to crock pot & push down into liquid.
  7. Turn crock pot on high & cook 2 more hours adding back the veggies if removed just to warm.
  8. Serve with a good mustard or place corned beef on a foil lined cookie sheet fat side up. Score fat, broil 3 minutes then pour about 1/2 cup Pineapple Ham Glaze Great for Corned Beef recipe # 57813 on top and broil for 2 more minutes.

Hi Judy,

Thank you for letting us know how the recipe turned out. I am glad it was good, but like you, I prefer ones that don't take as long. It sounds good for a special treat, though.
