Another healthy-sounding dish that is not too complicated to make.

Chicken and Black Bean Soup

A great crockpot dinner.
190 Minutes to Prepare and Cook

Ingredients


 

Beans, black, 2 cup
Chicken Breast, no skin, 1 unit (yield from 1 lb ready-to-cook
Chicken Broth, 6 cup (8 fl oz)
Carrots, raw, 1 cup, chopped
Celery, raw, 1 cup, diced
Onions, raw, 1 cup, diced
Salt, 1 tsp
Pepper, black, 1 tsp


 

Directions

Rinse one pound of black beans (two cups) and add to crockpot. Chop carrots, onions and celery and add to crockpot. Cover with six cups of chicken broth. Salt and pepper to taste. Cover and allow to simmer for at least three hours.

Hi Danna,

This is a big recipe, I have never used black beans, I don't know if I would like them

I may cut this into a 4th to try it.

Hi Myrna,
 
I have had black beans before and thought they were good. They are healthy for us, so I thought this recipe was worth trying. I am adding more fiber to my diet, and beans have a lot of fiber.
