No festival is complete without FUNNEL CAKES so gather round and they will be served hot and fresh. This is a Pennsylvania Dutch treat. FUNNEL CAKES 1 1/4 c flour 2T. sugar 1 t. baking powder 1/4 t. salt Beat 1 egg--add 2/3 c. milk and stir into all the dry ingredients. Stir til smooth. Heat oil or deep fat 375 degrees. Holding one finger over bottom of a funnel having a 3/8" to 1/2" hole, fill the funnel with batter. Holding funnel as close as possible, remove finger and with a circular motion, drop the batter into a 3 inch circle. Fry til puffy and golden brown, turning once. Remove with slotted spoon to absorbent paper. Sprinkle with confection sugar, cinnamon sugar or molasses. makes 2- 21/2 dozen cakes.
