Protein-Packed New American Beef Stew

One-pot meals are the original convenience food. They’re easy, versatile and can pack plenty of healthy ingredients. This stew takes only 20 minutes to prepare and features kale, green beans, carrots and, yes, even beef (gasp!). Seriously - beef is actually quite healthy provided that it is organic grass-fed beef. Use that kind of beef - even if you have to substitute grass-fed ground beef - and even traditional, comforting favorites like beef stew can fit into a healthy lifestyle with a few modifications and proper portion control. Authorities recommend limiting beef and other red meat to no more than 18 cooked ounces per week for lower cancer risk; however, at The Best Years in Life we recommend using organic grass fed beef. This is a great recipe to substitute super healthy organic bone broth (they carry it a many Walmarts now) for the beef broth.
