Roasted Almond Spinach Salad with Avocado, Strawberries & Sweet Pineapple Banana

This delicious vegan salad and sauce combination is sure to become a family favorite. It not only tastes great, it also offers a world of health benefits. In addition to being gluten free, it combines both raw and cooked ingredients which include items which are anti-inflammatory, anti-cancer, high in vitamin E, zinc, vitamin A and calcium, and healthy fats which are good for the skin and hair. Featuring strawberries, which are abundant during the summer, this recipe also works wonderfully with added cranberries, mandarin orange slices and/or apple pieces.

Hi Luella,

Thanks for the healthy recipes. Love the Almonds and Spinach. Sounds delicious. I've found some new snack crackers, Sweet Potato, that I love and I think they would taste great with this salad. You might like them as well. Only 140 Calories in a dozen of them.

You know that I love sharing recipes, so I'll try yours and I hope you'll try mine.

Hi Luella,

Glad to have you back as a member of my little Forum. It's always good to see my Friends and to share a recipe or two. Just hope they are helpful and that you don't ever leave without a full tummy and a Smile on your face.

As far as sharing the recipes, I assume with folks over at your Website, I must tell you that not all of these are originals. I've lived 66 years and was raised by a Grandmother and a Mother who were great old Country cooks. Some of the recipes are theirs. However, I've also been on every diet that has ever been conceived, so a lot of these are modifications of diet recipes such as from Weight Watchers, LaaLoosh, etc. Finally, I'm Disabled and Homebound so, as you can imagine, I spend many hours surfing the Web every day. I run across a lot of recipes as I surf. Of course, often times, I will modify them and generally will add my Affiliate links from time to time. I mention this simply because I don't want to step on any toes and offend anyone by using one of "their" recipies. Also, I know that you and I are affiliated with several of the same sites, such as Miracle Noodles, Nature's Remedies, etc., and I don't want to step on your links. If you do run across any like this, simply remove my link. By the way, I miss your link to Tropical Glen. That was some great music!

Having said all of that, if you don't see any conflict, I would be honored to have you mention some of my recipes whenever and wherever you see fit. The exposure would be great.
